    Red Velvet Cookies with White Chocolate Drizzle

    Red Velvet Cookies

    Halloween behind us, Thanksgiving ahead. And with this all - Christmas is only  53 days away! At this point a baker starts to plan what to bake. Cakes, pies, cupcakes and of course cookies. Lots of cookies!

            Every year, I try to find a new recipe to add to all those family favorites that are a must on the holiday menu.

            Those cookies might just be it.

            They look pretty festive and are really delicious!

            The original recipe has white chocolate chips mixed into the dough. I decided to play a little bit with the chocolate. I melted it and with a pastry bag fitted with a writing tip - I made a drizzle design on each cookie.

    2 cups all-purpose flour
    ½ c unsweetened cocoa
    ½ teaspoon baking soda
    ½ teaspoon salt
    1 cup unsalted butter, chilled and cut up
    1 cup packed dark brown sugar
    1 egg
    2 teaspoon red food coloring
    1 teaspoon vanilla extract
    ¾ cup white chocolate chips

    Whisk dry ingredients together ( flour, cocoa, baking soda and salt ) in a bowl. In a large mixing bowl, beat together butter and brown sugar until light and fluffy. Add egg, food coloring and vanilla. Beat until blended. Beat in flour mixture just until combined. Cover and refrigerate 2 to 3 hours or overnight. Preheat oven to 350 degrees. Farm 1" balls out of dough and place onto a parchment paper-lined baking sheet. Freeze for 10 minutes. Bake 10 to 12 minutes until cookies are puffed. Cool on the wire rack for a couple of minutes. Transfer onto a wire rack to cool completely. In the microwave, melt the white chocolate chips in a small bowl. Whisk until smooth and cooled a little bit. Place in a pastry bag fitted with a writing tip and have fun decorating your cookies!

                   And because I like to put coconut into my cookies, I scooped out about a cup of the cookie dough into a small bowl and added about ¾ of a cup of the sweetened flaked coconut. This ratio is up to your likings. I like a lot of coconut, so I kept adding and mixing until I was happy with the dough.

    Grilled Pineapple

    Why This Recipe Works

    Chocolate ganache is a French dessert glaze, sauce, or frosting made with chocolate and cream. It is very simple to make. This rich, decadent, and the incredibly smooth mixture is made by melting chocolate with hot (not boiling) cream.

    You can use dark, milk, or white chocolate to make it, however, the substitutes for cream are a little tricky. Coconut cream or condensed milk may work. You can add a dash of salt or instant coffee granules to intensify the flavor of chocolate.

    Cranberry Pie

    Every year, as soon cranberries show up in our grocery store, I stock up. I adore these gorgeous ruby berries! They are not only healthy but can be used to make one delicious jam to enjoy on a bagel on a snowy winter morning. This year, I will also be turning them into a delicious tarty-sweet filling for this gorgeous pie. It's very simple to make, especially if you use a store-bought pie crust as I did. You can also make a graham cracker crust. If you have more fresh cranberries on hand after making the sauce and this pie, you can also turn them into a jam or relish.

    This Christmas snack is quick and easy to make, just like the Rolo Pretzel Bites and Christmas M&M Cookies.

    Whether you call it Muddy Buddies or Puppy Chow, this chocolate cereal is a must for the holidays. My recipe does not use butter or peanut butter and makes perfect little bites. Melting chocolate with oil prevents it from clumping and makes it perfectly smooth. It will fill the cereal and prevent them from sticking together while coating with powdered sugar. This might not be the classic way to make this snack, but it is my favorite. It works every time!

    Fans of meringue desserts, I have a simple yet impressive dessert idea just for you! This wreath-shaped Pavlova is crispy on the outside and light and chewy inside. It's topped with freshly whipped cream and thick cranberry sauce. A few pomegranate arils are little tiny jewels, shining on this beauty.

    This Christmas Pavlova is easy to make but requires planning. Whipping egg whites takes about 10 minutes, the cake bakes for 1 hour and 15 minutes and then needs to dry for at least 1 hour in the turned-off oven, with the door slightly ajar. You can make the cake and cranberry sauce up to 2 days in advance.

    The Best Chewy Snickerdoodles Recipe - easy and irresistible snickerdoodle cookies with the classic cinnamon sugar coating. No mixer needed just two bowls and a whisk.

    Every time I tell my Hubby that I am making his favorite cookies, he says: "snickerdoodles!". You would think that the favorite would be a classic chocolate chip but it's not. It's a buttery, sweet cookie with cinnamon sugar to create a crispy coating. Every cookie is soft, chewy, not at all cakey and each bite melts in your mouth. You will be swooning over how delicious these cookies are and how easy they are to make!

    Whole Wheat No-Knead Bread is a healthy version of the classic no-knead bread made with whole wheat flour. Add nuts and seeds for more texture!

    My current favorite breakfast consists of two slices of this Whole Wheat No-Knead Bread topped with sliced avocados, sprinkled with salt and garlic powder. It's so good and so easy and much tastier than oatmeal right now. I love making the No-Knead Bread because it's pretty much hands-off yeast bread but this whole wheat version is currently on rotation here. I have been using whole wheat flour more lately, even in our pizza dough recipe, and we love it.

    This Whole Wheat No-Knead Bread is easy and delicious! It's a great way to limit white flour amount in your diet and skip buying a white sandwich bread. You can add nuts and seeds to give it more texture and enjoy with a generous amount of peanut or almond butter and this chia jam. So tasty!

    HOW TO MAKE PRETZEL CANDY

    We dipped the bites in semi-sweet and milk chocolate. You can dip the whole pretzel bite or just half of it or make a combination of both. They are fun and festive thanks to the holiday theme sprinkles. They will look gorgeous on your holiday table or packed in mason jars and given away to friends and family.

    We love Christmas candy, especially if it's easy and involves caramel. Our goal with these pretzel bites was to use just enough caramel that it will melt into the pretzel holes and not go over it. Half of a caramel square was just perfect to achieve that!

    Easy Chocolate Caramel Pretzel Bites

    Ingredients

    • 24 pretzels
    • 12 in caramel squares unwrapped, cut half, I used Kraft
    • ¾ cup semi-sweet or milk chocolate melted with 1 teaspoon coconut oil
    • Christmas sprinkles
    US Customary - Metric

    Instructions

    • Preheat oven to 375 degrees F.
    • Line a baking sheet with parchment paper or silicone baking mat.
    • Layer all pretzels on the sheet.
    • Place half of caramel squares on each pretzel.
    • Bake in the oven for 3 to 5 minutes. The caramel will be melty but not completely filing the holes of pretzels. It will spread as it cools. Cool pretzels completely before dipping in chocolate.
    • When cool, dip pretzels in chocolate (cover whole pretzels or dip halves). Tap against the bowl with chocolate to help excess drip off back to the bowl.
    • Place back on the sheet. Sprinkle with funfetti. Let cool completely.
    • Store in air tight container.

    Please note, if your oven runs hotter, bake the pretzels for 4 to 5 minutes. The caramel is just suppose to be heated up to soften.

    Slow Cooker Peach Crisp recipe - sweet peaches, sliced and tossed with vanilla, baked under oats and brown sugar topping that tastes just like oatmeal cookies! This is my favorite crock pot dessert for hot summer days!  Served with whipped cream or vanilla ice cream.

    For the last two weeks, temperatures here in Kansas are crazy high. We are at almost 100 degrees F every day. And there is no change in sight!

    In other words - IT"S HOOOOOOTTTT!

    Aaaand from what I can see on my weather app, so is most of the country. Which means that there is a high chance that just like me, you  don't want to turn on the oven. Mine has a "do not open" sign on it. Instead, my slow cooker is getting a work out (this Teriyaki Chicken is on a rotation!) and our grill is sizzling away (don't mind if I have another helping of these Pineapple Chicken Kabobs!).
