    White chocolate and coconut. One of my favorite combos. I finally made it into a cookie! Soft, chewy, melt-in-your-mouth cookies!

    Honestly, it would be quite embarrassing to admit how many of these I inhaled while they were still warm. They are just so good!

    If you look at the recipe, you will notice that I used the same base as the Funfetti Birthday Cake Sugar Cookies. I can't get enough of this sugar cookie base. It's fantastic! The cookies come out soft and chewy and stay like that for at least 3 days. If you can keep them for that long from yourself and your family that is.

    If you are following me on Instagram, you know that our oldest daughter takes ballet classes. In just 5 days she will have her recital. The costumes are ready, they have their dance down and are super excited to get on the stage! We are so proud of her! It's her second year and second recital and I think she is even more excited then the first time.

    Me? I am a pile of nerves. I am already freaking out, worrying if we will get there on time, find parking space, not forget a piece of her costume, change in time for the second dance - all of that with three kids in tow. And of course I need to remember to bring tissues for myself. I know already that I won't be able to hold it. I couldn't last year so I don't expect this year be any different.

    First of all, let me apologize for two different leading photos in this post. I couldn't help myself. I love these cookies and they love my camera. 🙂

    These babies are super easy to make. The basic recipe is made from 3 ingredients (flour, sugar and butter) but I added toasted coconut. To jazz'em up a bit! 🙂 Hence the 4-ingredient recipe.

    After a nice bake in the oven, it's time for a chocolate bath. I went with white chocolate because it always goes so well with coconut. You can add food coloring to it to give the cookies some color. You can choose a few pastel colors and serve these on your Easter brunch. They are guaranteed to be a hit!

    I think we all are familiar with the easiest cookies in the world: the flourless peanut butter cookies. The recipe for them is in almost every church cookbook. I have prints from my Hubby's grandmother that were cut out from a newspaper decades ago.

    I had to make these cookies three times before they were ready to be on my blog. I kept running out of cookies because my kids keep sneaking in to grab one and run for it! It was a challenge but I think I made it. 🙂 And honestly, I don't blame them. These cookies are so good! My favorite of late, actually.     WHOLE WHEAT CHOCOLATE CHIP COOKIES

    Oh my! These have become one of my very favorite cookies. They are on my Top 5 list. They are so incredibly good! I was quite surprised. Or maybe not really. I loved the focaccia and its amazing texture. I should have expected I would like these.  The whole wheat flour (the only flour in this recipe, by the way) gives these cookies a nice hearty, almost a nutty flavor. I love it! I don't like nuts in my cookies or brownies but I love the nutty flavor these have from the whole wheat flour. There is no all-purpose flour in them, only white whole wheat. So you are getting your grains. The cookies are soft, a little chewy, with a slightly crispy edge. They stay soft for at least three days. I even left some on the counter and they were still soft the next day.

     As you can see, I decided to bake my way through Winter. No day goes by without my mixing bowls in use. That's how I deal with this gray and cold season.     SOFT GINGER COOKIES

    This is a classic. Ginger cookie - rolled in sugar, full of spice and gorgeous with all it's crevices. The combination of ground ginger and molasses makes it a perfect cookie for the cold season. It spreads the warm and cozy feeling as it melts in your mouth.

    These babies are soft and chewy. Fluffy and puffy. For more crispier cookie - bake them for few more minutes. But beware, these are easy to over-bake. Also, to achieve the look show on my photos, do not flatten the cookie balls before baking. Simply roll a cookie ball in sugar and place on baking sheet, just like when making my Gingerbread Snickerdoodles.

    Chocolate cookies with a kick. Trust me, these are crazy good! Chewy and soft. Kept in a cookie jar, they stay that way for at least three days. If they last that long, that is. 🙂 The sweet chocolate flavor is followed by the spicy pepper. Perfect sweet and spicy balance!     When you want soft and chewy chocolate chip cookies, you need to try these Pudding Chocolate Chip Cookies. They are super easy and fun to make and always a hit with my family.

    I wanted to include the pudding version for two reasons: I was really curious to see how adding pudding to cookie dough affects the texture of the cookies; I have been noticing more and more recipes for pudding cookies. Which means there are a lot of flavor possibilities out there. Pistachio pudding cookies anyone?Easy to make and oh-so-good! No refrigeration of the dough needed. Let the kids make them!     New York Times Chocolate Chip Cookies

    The time has come for these to appear on the series. The famous New York Times Chocolate Chip Cookies happened in my kitchen. And you know what? I am not impressed.

    Nope. Sorry. They are a good cookies but to me, they are far from perfect. I had high expectations. After making these, how could I not have? As I was shaping the dough on my cookie sheet, I knew they were too big. When they came out of the oven, the looks were disappointing. After we took a bite... meh. Just a regular cookie. No wow factor.

    Few things about this recipe:

    - it calls for types of flour I wouldn't normally have in my pantry

    - makes an enormous cookie, quite overwhelming to eat; I made only 4 cookies the size called for in the original recipe and about 10 regular size cookies as

    - they don't look as tempting as other types I have made in this series.

    But I wanted to give them a try. And you should too if you are a huge chocolate chip cookie fan.

    I have only one more recipe to go and the series will be completed. I can already say, we found our favorite. But I will leave the final thoughts to my last post in the series.

    Ladies and gentlemen, I present you the perfect chocolate chip cookie. In flavor, texture and look. The folks at Cook's Illustrated know what they are doing. Their recipes never disappoint me. That's why I was super excited to try this one. It's even called "the perfect chocolate chip cookie"!

    These cookies are the most beautiful cookies I have ever made. They have a crunchy ring on the outside and deliciously chewy inside. The outer layer is crunchy too, leading you to the melty gooey center.

    CCC Monday: Waffle Chocolate Chunk Cookies

    Before we get to the cookies....
    1. If you follow me on Twitter, you know that my sweet little Boy made his first steps! We are over the moon! He is walking more and more everyday and as soon we start clapping and exclaiming our excitement - he plops on his bottom. 🙂 He is such an adorable kid! Pics coming soon! 🙂
    2. You might have noticed some changes here on Crunchy Creamy Sweet. In fact, if you stopped by here in the last few days, you may have even got dizzy from rotation of my blogs elements, some things disappearing and some appearing.
    Well, there will be even more... Sorry... I am in the process of moving the blog to a self-hosted WordPress and overall making-over the blog design. I am really lucky my Hubby is good in this stuff, or I would be in a World of trouble. It's a lot of work! I didn't expect it to happen so quickly but we decided it would be good to have it done before the blog turns 1 year-old. Just a little birthday gift. 🙂
    Anyways, I hope you will be patient with me. I will be posting as usual and eventually will move everything and settle in WordPress. I will keep you updated!
    3. Last Friday, I woke up to find out that Amy, from She Wears Many Hats, tried my recipe for the No-Bake Chocolate Cheesecake! I had to breathe in a bag to calm down from the excitement! I hope you got to see her step-by-step photo tutorial on Tasty Kitchen blog. If not, what are you waiting for? 🙂
    Okay, now onto cookies.
    I bet there were few raised eyebrows when you saw the title of today's CCC Monday, huh? 🙂
    Well, I found yet another way to make chocolate chip cookies without turning the oven on and still be able to enjoy a crispy chipper.
    Enter waffle maker.
    I have to say, I was skeptical when I saw this recipe. But nevertheless intrigued. I had to try it!
    How did they turn out? Pretty good actually. But there are few tricks to this method.
    1. The dough is more a batter than a dough. But don't let that fool you. It will be a little watery after you mix all the ingredients together and you can even place it in the fridge while preheating your waffle maker, so the dough will set a little.
    2. I recommend using mini chocolate chips or chocolate chunks for this version.
    3. You really have to keep an eye on these. They burn fast! Of course, it depends on the temperature setting of your waffle maker, but you should know your little gadget and adjust the settings as needed. I have a Cuisinart waffle maker and I set it on 3.
    4. Let them cool and they will be crunchy. At first, they feel... well,... like waffles. Soft. But then as they cool, they get crispy like cookies.
    5. It's a fun way to cheat the heat and still enjoy a crunchy cookie! The kiddos love this idea! The dough is so easy to prepare that they can help with stirring it.

    Fun twist on a classic. Chocolate Chunk Cookies made in waffle maker.

    Ingredients

    • ½ c packed brown sugar
    • ¼ c granulated sugar
    • ½ c butter melted
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 c + 2 tablespoon all-purpose flour
    • ½ teaspoon salt
    • ¼ teaspoon baking soda
    • ½ c mini chocolate chips or chopped chocolate bar I used ½ bar of Hershey Special Dark
    US Customary - Metric

    Instructions

    • In a microwave-safe measuring cup, melt ½ cup of butter.
    • Pour it into a medium mixing bowl. Set aside
    • In a small mixing bowl, whisk together the dry ingredients ( flour, soda and salt ).
    • Add chocolate chips or chunks to dry ingredients. Stir.
    • Add both sugars to your melted butter and stir together until smooth.
    • Add egg and vanilla and stir again.
    • Add the dry ingredients with chocolate and fold it in. Do not over mix.
    • You can place the bowl with your dough in the fridge while preheating your waffle maker.
    • Scoop the dough by teaspoons and bake for about 2 minutes. Check on the cookies. You can bake them for another 30 seconds if you want them more brown and eventually more crunchy.
    • Let cool on a wire rack. They will crispy up as they cool.

    CCC Monday: Dorie Greenspan's Chocolate Chip Cookies

    Happy Monday!

    Today is going to be a little different. One, there is no recipe to share. Two, it's my Little Guy's 1st Birthday so I am totally distracted by this huge event.

    I actually considered not posting CCC Monday today but I would hate to disappoint you.

    So, I decided to share my notes on the recipe. I will revisit it again and then share it. In the meantime, if you would like to prove me wrong make it anyways, here is the link to it.

    My notes:

    1. It has been so humid here, in Kansas, that I have been having problems with my baking endevours.
    2. The cookies came not even close to what they were supposed to look like and taste like.
    3. They were so cakey, that not even sea salt sprinkled on top could save them.... 🙁
    4. I blame it all on the humidity....

    And this is what Momma does, when the Little Guy is napping.
    Instead of laundry, of course. 🙂

    I will be back tomorrow with a delicious recipe. This week, by the way, is going to be HUGE!!

    White Chocolate Chip and Raisins Cookies

    My Hubby is very particular about his chocolate chips cookies. He has this magical ability to recognize the perfection in them. As I refuse to buy a ready-made dough in a tube, I am looking far and low for the best recipe.

    Why do you think his favorite cookies are snickerdoodle and not the all-time-classic chocolate chip?

    Because I have not perfected them yet... And when it comes to classics - I want perfection.

    So I have been on the hunt for the best chocolate chip cookies recipe. I tried so many of them, I could write a book about it! Few times I actually got them right! I was happy and content.

    Until I made them again... and they would raise too much... and be too chunky....

    What are the features I am looking for? Flat, crispy edges, gooey and chewy inside, studded with chocolate chips and "when you pull the cookie apart it has to have the gooey threads".

    Yes, I did Google it out.

    And got 2,3 million results!

    It means that I am not the only one who wants my chocolate chip cookies that way.

    And that 2 million people found the secret to it and I am not one of them...

    But I am not being discouraged by the statistics! I accept the challenge with grace! I will make batches and batches until my apron hangs on a single thread and there is no more flour in town!

    Aaaanyways, at this point I am baking the cookie dough without the chips. I will bake a first dozen and then I know if it's what I am looking for. This time, the cookie was chewy on the inside and had the crispy edges, but it was too chunky, and there was no gooey threads.

    So I added white chocolate chips and raisins to the dough and instantly, magical-y the cookie was accepted and yummy.

    White Chocolate Chips and Raisins Cookies

    1 ½ c all-purpose flour
    ½ teaspoon baking soda
    4 oz. butter, softened
    ½ c granulated sugar
    ½ c packed brown sugar
    ¼ teaspoon salt
    1 egg
    1 teaspoon vanilla extract
    1 ½ c white chocolate chips
    ½ c raisins

    Preheat your oven to 350 degrees.
    In a medium mixing bowl, whisk together the dry ingredients ( flour, soda ). Set aside.
    In a large mixing bowl, beat the butter for 2 minutes. Add sugars and salt. Beat until fluffy.
    Add the egg and vanilla. Mix until incorporated. Add the flour mixture and stir it in.
    Add the chips and raisins and stir again. Scoop the dough with a cookie scoop or a tablespoon onto the baking sheet.
    Bake 11-12 minutes, until the edges start to brown.
    Cool on a wire rack.

    Please, don't think it's a reject cookie recipe. They are really delicious! If you are a fan of white chocolate and raisins combo - you will love these!

    Decorated Sugar Cookies

    It's a Christmas Tree cookie!

    I have mentioned in an earlier post, that this year my Daughters, Audrey and Vivienne, are decorating cookies for the first time. I want to share their creations. I am totally in love with those cookies and proud of my Girls! 🙂

    I showed them the technique on one cookie and they made a batch of beautifully marbled sugar cookies!

    Chocolate Crinkle Cookies

    In case you do not have enough Christmas cookies on your to-bake list, you might want add this one.

    In case you feel like something is missing and you just had a plate-full of sugar cookies, you might want to think about this one.

    I will make it easy for you - just make this one.

    Nothing against sugar cookies! Don't get me wrong. But sometimes you just need a chocolate cookie that melts in your mouth and you instantly relax. 🙂 And who doesn't need to relax for a short moment during this crazy busy holiday time?

    Ingredients

    • ⅓ c butter softened
    • 1 c brown sugar packed
    • ⅔ c unsweetened cocoa powder
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 2 egg whites
    • ⅓ c sour cream
    • 1 ½ c all-purpose flour
    • ¼ c powdered sugar sifted ( place in a small bowl, for rolling )
    US Customary - Metric

    Instructions

    • In a large mixing bowl, beat butter for about 30 seconds.
    • Add sugar, cocoa, soda and cinnamon. Beat until all is combined. Scrape the sides of the bowl.
    • Add egg whites and sour cream and beat again.
    • Beat in as much flour as you can with the mixer. Stir in any remaining flour. At this point you can cover the dough and refrigerate for about 3 hours, so it's easier to handle. I might have waited about 30 minutes ( impatient me, but how can you blame me - it's chocolate cookies we are talking about here! 🙂 ).
    • Drop a teaspoon of the dough into powdered sugar and roll into a ball. Place on a greased or parchment paper lined baking sheet, 2 inches apart.
    • Bake for 8 to 10 minutes in a 350 degree oven. Edges of the cookies should be firm. Transfer all onto a wire rack and let cool.

    Notes

    Total time includes chilling time.
