Why This Recipe Works
Chocolate ganache is a French dessert glaze, sauce, or frosting made with chocolate and cream. It is very simple to make. This rich, decadent, and the incredibly smooth mixture is made by melting chocolate with hot (not boiling) cream.
You can use dark, milk, or white chocolate to make it, however, the substitutes for cream are a little tricky. Coconut cream or condensed milk may work. You can add a dash of salt or instant coffee granules to intensify the flavor of chocolate.
I use this ganache to make my homemade truffles but it is also a great filling for sweet crepes.

- heavy cream or heavy whipping cream

How to make Chocolate Ganache?
- Start by placing chocolate in a medium mixing bowl.
- Heat up cream in a saucepan or in a microwave just until simmering. Do not boil it!
- Pour the cream over the chocolate and let it sit for 3 to 4 minutes. Do not stir.
- Whisk the mixture until dark and smooth.
- Cool to use in a recipe.
How to use chocolate ganache?
- glaze: cool the ganache slightly, then pour over the dessert (trifles, bread puddings, ice cream, sundaes, pies, sweet crepes, etc.)
- frosting: cool the ganache completely, then spread over cake or in between layers; you can also whip with a hand mixer until fluffy and pipe it;
- truffles: pour the ganache into a shallow dish (bowl, baking dish, rimmed pan), then chill until set. Scoop it with a spoon and roll it into balls. Coat with cocoa powder. Serve.
- filling: chill the ganache just like in the truffle tip above, then scoop and roll into balls. Chill again, then use in cupcakes or cookies (before baking).
Storing:
The ganache is best if used the same day. Any leftover should be stored in a container with a lid, in the fridge, since it contains cream.
Can I make it ahead of time?
The longer the ganache sits, the thicker it will become. Depending on what dessert you want to use the ganache in, keep that in mind. If you need it pouring consistency, cool it for 5 to 7 minutes, then use. If you want to whip it and use as a frosting for cakes and cupcakes, cool it completely, then mix with a hand mixer.

- ½ cup heavy cream
Instructions
