This Baked Zucchini with cheddar is an easy side dish made with the popular summer vegetable. Great way to enjoy zucchini this season. Each slice is cheesy and delicious!

If you have a ton of zucchini, you may also like my Crispy Zucchini Fries or the Apple Zucchini Muffins, a perfect snack!

Baked Zucchini

I bought a bunch of zucchini to make my go-to dishes. I was going to coat it with Parmesan breadcrumbs and bake but then I saw a big block of cheddar in my fridge. I love the flavor of toasted cheddar! The idea for these Cheddar Baked Zucchini Slices was born.

No Mayo Potato Salad

This No-Mayo Potato Salad features golden potatoes, green onions, herbs, and a simple vinaigrette! No mayo insight which means this salad is perfect for picnics and backyard BBQs!

I serve it with grilled chicken thighs or baked pork chops. A simple creamy coleslaw makes for a great pairing too!

Simple No Mayo Potato Salad

When I am asked, what to serve with grilled chicken or burgers, almost always I will say “potato salad”! It’s a staple in our house during summer. My Instant Pot Potato Salad is always a hit! However, I do know that there are many people who just don’t like mayo.

So, if you need to avoid mayonnaise but would love to enjoy this classic dish, this recipe is for you! Simple ingredients, fresh herbs, and zesty vinaigrette make this healthy dish a hit. No mayo also means the salad will keep longer and it’s great served outdoors. Win-win!

Creamy Polenta Recipe

This Creamy Polenta is the Italian version of grits. Simmered until thick, then finished off with butter and Parmesan cheese, this dish is pure comfort food and a wonderful base for many dinners!

Think of it as a substitute for mashed potatoes, pasta or rice. Top it with pasta sauce, meat with gravy, shrimp or sauteed veggies and enjoy!

Polenta is a common Italian side dish that can be served for breakfast (like porridge) or dinner (like mashed potatoes). It’s creamy and delicious! Made with only a few pantry staples, this polenta is truly comfort food.

If you want it more creamy, add more water or even milk. If you want it thicker, use less liquid. You can also pour it into a rimmed baking pan and let it set, then cut and fry in butter. It’s so tasty!
