This time I used brown sugar that made the cookies ultra soft and chewy. Dipping them in melted semi-sweet chocolate is the perfect finishing touch. That and the chopped peanuts that add a nice crunch.

So I decided to try the cake mix recipe but with melted butter in place of oil. You guys!! These are CRAZY DELICIOUS!     To me, every season has it's scent. Summer smells like peaches, fall smells like cinnamon and winter smells like pine trees. Spring to me definitely has a scent of lemon. Freshly grated lemon zest is my favorite this time of year. I love adding it to my baking projects or simple pasta dishes. Few days ago I added it to my favorite roasted potatoes, then sliced the lemon and placed it over chicken right before baking. So good!

    If you ask our kids, what are holidays about, they will say present, sure. All kids will. But they will also say it's about family. We love to involve the whole family in Christmas preparations and making cookies is definitely a part of it. It's also their favorite part! They want to help with every step, from making the dough, decorating the cookies, packing them in pretty containers and delivering to family and friends.

    Somehow I feel like this year I am a little late to the coconut game. Usually, I get crazy with it in late January because I truly love it and it just fits perfectly with the outdoor scene. Everything is covered with a fluffy snow!

    This year, I blame it on the weather. It's been glorious here in Kansas. Unusually warm and sunny for days. Until just few days ago when overnight we got a ton of snow. Right now it's 19 degrees. So so cold!

    Bring on the coconut and let's make cookies! They will hold us over till Spring!

    How do you feel about a white chocolate and cranberry combo? I hope you are like me and love it, because these cookies are all about it. Soft and chewy sugar cookies are topped with melted white chocolate and dried cranberries and ready to much on.

    This idea is based on one of my favorite bars, ones that I make a lot this time of year - Cranberry Bliss Bars (a Starbucks Copycat). I can't call them Cranberry Bliss Cookies since there is no cream cheese frosting involved (even though I had strong intentions to do so) but they are still absolutely delicious!

    I actually made them in a hurry. I had a batch of my favorite sugar cookies all baked and cooled. They were waiting to be frosted. But then I was in a hurry, leaving for a ballet class with my girls and there was no time to whip up a frosting. So melted chocolate it was!

    When in doubt, melt some chocolate. Only good things can come out of it. Also, when it's cold outside - bake something! It always works and it's bound to put you in a good mood.

    So apparently, it's already November 6th. Which means there are 21 days left till Thanksgiving and 48 days till Christmas. How did this happen? Where is the time going?

    I think I am still recovering from the time-change. It always takes me a couple of weeks to adjust to the shorter days.

    If that's not enough, the weather turned seriously chilly here in Kansas and I've been wearing scarves everyday. I don't do well in cold.

    So I baked cookies. Because cookies make everything better. These are not any fancy cookies, no special ingredients or techniques needed. They are good ol' fashioned oatmeal cookies iced with the simplest glaze ever.

    Chocolate chip cookies can be pretty amazing by themselves. But stuff them with caramel and you are entering a whole new world. It's like hiding the best present ever inside an already yummy treat. Pass me the plate!
