Coconut Cookies
Do you happen to have sweetened coconut in your pantry? If so, and you just happen to love desserts with this ingredient, I have just the cookie recipe for you! These cookies are very easy to make, thick, chewy, and absolutely delicious. Filled with coconut goodness, they are a real treat! Use coconut extract if you can to really amplify the flavor of this star ingredient.
Ingredients:
- all-purpose flour
- sweetened coconut
- baking powder
- baking soda
- white sugar
- brown sugar
- vanilla extract
- egg
- unsalted butter
How to make Coconut Cookies from scratch?
- Start by whisking together the dry ingredients.
- Melt butter in a microwave until just barely melted and let it cool completely.
- Add both sugars to butter and whisk or mix with a mixer for 1 minute.
- Add egg and vanilla and whisk until just incorporated.

- Cover the bowl with dough and chill for 30 minutes.
- Scoop 2 tablespoons of dough and roll into a ball. Place on a baking sheet, about 2 inches apart.

- Cool and serve.
Tips for the best Coconut Cookies:
- the extract: if at all possible, use coconut extract to strengthen the coconut flavor
- coconut: I like to use sweetened because of the texture and because it is easier to find in the store
- butter: always use unsalted butter for baking to control the salt amount
- melting butter: place it in a microwave-safe bowl and melt for 15 seconds, stir and melt for 10 seconds; it should be almost melted (a few solid pieces visible); stir it until smooth and let it sit on the counter until it is completely cooled to the touch;
- chilling the dough: chill it for thicker cookies or bake right away for flatter cookies with a crispy edge;

- 1 ½ cups all-purpose flour
- 1 ½ cups sweetened coconut
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt

- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- In a large mixing bowl, whisk together flour, baking soda, baking powder, salt and coconut. Set aside.1 ½ cups all-purpose flour, ½ teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon salt, 1 ½ cups sweetened coconut
- Place butter in a heat-proof bowl. Microwave for 15 seconds, stir gently, then microwave for 10 more seconds. It should be almost melted. Stir it until smooth and let it cool completely.½ cup unsalted butter
- Add both sugars to butter and whisk or mix with a mixer for 1 minute. It will thicken as you whisk it.½ cup granulated sugar, ¼ cup packed light brown sugar
- Add egg and vanilla and whisk until just incorporated.1 large egg, 1 teaspoon vanilla extract
- Add wet ingredients to dry ingredients and stir everything with a wooden spoon.
- Cover the bowl with dough and chill for 30 minutes in the fridge.
- Line large baking sheet with parchment paper or silicone baking mat.
- Preheat oven to 350° F.
- Scoop 2 tablespoons of dough and roll into a ball. Place on a baking sheet, about 2 inches apart.
- Bake in preheated oven for 9 minutes.
- Cool cookies on a rack, then serve.
Notes
- To strengthen the coconut flavor, use coconut extract.
- Chill the dough for thicker cookies or bake right away for flatter cookies with a crispy edge.

OMG! These cookies are delicious. My son loves everything coconut and he was feeling a little homesick. He is doing the soldier thing and needed a little taste of home. I just happened to stumble on this recipe and I am glad I did. I followed the recipe to a tee with the exception of instead of the vanilla I inadvertently added lemon extract( I was doing multiple things and apparently not paying attention:) they turned out amazing!
