Creamy Italian Chicken Pasta - saucy pasta dish with chicken, spinach, tomatoes, olives, mushrooms and angel hair pasta. It cooks in 20 minutes and it's pure comfort food for the soul!
I serve this pasta with Easy Garlic Bread or my Cheesy Garlic Butter Breadsticks and a side of Caesar Salad.
One can never have too many pasta recipes, am I right? So here is another one, pure food for the soul. Angel hair noodles with a delicious sauce, packed with chicken, tomatoes, olives and mushrooms. Filling dinner that's quick to make and bound to be a hit! This is one of those dinners that anyone can make on a busy weeknight or a lazy weekend. It's great to serve to a company of friends or to feed a family of 4 or 5 (if you have small children).
Ingredients:
- Angel hair pasta
- olive oil
- butter
- chicken breast
- salt and pepper
- dried oregano
- Italian seasoning
- white mushrooms
- garlic
- black olives
- diced tomatoes
- fresh spinach
- half and half
How to make Italian Chicken Pasta?
- Start by cooking pasta according to instructions on the box. Drain, keep warm.

In a large saucepan, heat up olive oil and butter over medium heat. Season chicken with salt, pepper and dried oregano. Add to saucepan. Cook chicken until almost done. Add mushrooms and garlic and cook until chicken is done.

Add black olives, the whole can of diced tomatoes (juices and all) and fresh spinach. Cook stirring often, for about 4 minutes. Add half and half and simmer on medium-low just to heat up the mixture. Remove the saucepan from heat.

Add pasta and toss everything together. Serve.

Flavors:
Size of pasta and the texture can change a dish like I wouldn't imagine! This pasta literally melts in your mouth. My Hubby agrees and he is the toughest judge! The sauce from half and half and veggies and chicken plus spices will make you slurp the noodles like nobody's business. The Tuscan flavors here come from olives, tomatoes, spinach, and spices but I added mushrooms and skipped the white beans (I have a few picky eaters on my hands 🙂 ). And of course, there is garlic. Something magical happens when you add garlic to sauteing mushrooms. The fragrance is out of this world and makes you feel good in your soul. It's the smell that happy childhood memories are made of when you come into the house after school and you know Mom is making something good in the kitchen. 😀

Ingredients
- 6 oz angel hair pasta
- 1 Tablespoon olive oil
- 1 Tablespoon butter
- 1 lb boneless skinless chicken breast cut into bite size pieces
- salt and pepper
- ½ teaspoon dried oregano

- 4 oz white mushrooms washed and sliced
- 2 cloves garlic minced or grated
- ¾ cup black olives each sliced in half
- 1 can diced tomatoes 15oz, do not drain
- 2 leaves handfuls fresh spinach torn if the are large
- ½ cup half and half

Delish! Very easy recipe filled with amazing flavor. Modified a few items like fresh tomato instead of can diced, almond milk instead of half & half and added artichokes. Healthy and light. Thank you!
