This Sun-Dried Tomato Chicken Pasta is rich in flavor and so easy to make for dinner any day of the week. It's creamy, filling, and perfect served with cheesy bread or toasted baguette slices.
Ingredients:
- sun-dried tomatoes in oil: not salad topping; you will use the tomatoes and the oil for this dish;
- chicken: boneless skinless chicken breast or thighs;
- pasta: any bite-size pasta works, I used penne;
- seasoning: salt, pepper, Italian seasoning or dried oregano;
- garlic: aromatic that adds depth to the flavor of this pasta;
- milk: whole milk or half and half for the sauce;
- cornstarch: helps thicken the sauce since we are not using heavy cream;
- Parmesan cheese: essential for the Alfredo sauce in this dish.

- Start by heating up a mix of olive oil and sun-dried tomato oil (straight from the jar) in a skillet.
- Add chicken, season with salt, pepper and Italian seasoning and cook until done. Remove onto a plate.
- Add more oil to the pan, add garlic and chopped sun-dried tomatoes. Saute for 3 to 4 minutes, until fragrant.
- Add sauce mixture and Parmesan cheese. Simmer to thicken.
- Add back the cooked chicken and stir in.
- Add cooked and drained pasta and stir everything together.

Sun-dried tomatoes are exactly what the name says: tomatoes dehydrated in the sun. You can buy them in oil (that is actually very flavorful) in jars or in a paste form. You can also make your own.
What to serve with this pasta?
Pasta always goes well with bread. I make my skillet focaccia or toast baguette slices. A good Caesar salad just before the main course is also a great idea!

Ingredients

- 2 teaspoon minced garlic
- ¼ cup sun-dried tomatoes chopped
- 2 cups half and half or whole milk
- 1 tablespoon cornstarch
- ½ cup shredded Parmesan cheese divided
- chopped parsley for garnish
- 2 cups penne pasta, uncooked

- Serve with garlic bread or toasted baguette.

I like the recipe but was a little frustrated when the top says pasta uncooked but then later in the steps to add in cooked and drained pasta.. just throws off the timing of getting it put together. Other than that great recipe.
