This colorful and healthy Roasted Beet Salad is packed with nutrients and flavor. Mixed greens, feta cheese, pecans, and roasted beets are drizzled with citrus dressing in this delicious salad!

Serve this salad with Homemade Croutons for added crunch and texture. My Lemon Vinaigrette is perfect for a pop of bright flavor.

Recently, I shared my go-to recipe for roasted beets. They are so delicious, that I knew I wanted to find another way to enjoy them aside from being a side dish. Combining them with a simple baby greens mix, feta cheese and nuts sounded just right. I have been enjoying this salad for lunch every week and I absolutely love it!

Ingredients:

  • beets
  • mixed greens
  • feta or goat cheese
  • pecans or walnuts
  • citrus dressing

How to make Roasted Beet Salad?

  • Start by roasting beets.
  • Prepare the dressing if using homemade.
  • To plate: start with greens, then add beets, cheese, and pecans.
  • Lastly, drizzle with dressing.
  • Serve immediately.

What greens can I use?

I absolutely love the Italian mixed green salad (with baby lettuce and greens, radicchio, romaine, bibb, spinach). Any lettuce mix you like will work.

Storing leftovers:

I recommend storing roasted beets and the greens separately. The beets can be served cold and wared up. Assemble the salad and serve with dressing.

Ingredients
 
 

  • 4 medium beets
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups mixed greens
  • 1 cup feta cheese
  • ½ cup chopped pecans
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the oven to 400° F.
  • Wash, trim and chop beets. Place on a baking sheet and roast for 30 to 35 minutes.
  • Remove from the oven and let cool.
  • Arrange greens in a bowl or plate.
  • Top with roasted beets, feta and pecans.
  • Mix oil, lemon juice, salt and pepper. Drizzle over salad.
  • Serve immediately.

    This salad is so good! I definitely recommend it with goat cheese! It's the perfect amount of creamy and salty to go with those wonderful, sweet beets!
