This year, I decided to sign both of our daughters for dance classes. Our oldest one will be taking ballet and jazz and her sister is starting her first year of jazz. That means Tuesday nights will be a little bit longer for us. That also means that I am going to need more energy to get through it. These little bites are my favorite solution. Knowing how much my kids love my chewy granola bars, I knew that these bites would be a hit as well. They are easy to make (actually the kids can make them themselves!), don’t take much space in a lunchbox and are so fun to pop in!
I’ve made them several times already and the classes hasn’t started yet! They are just so good!
So what’s in them? Oats, coconut, mini chocolate chips and ground flax seeds with honey and peanut butter to glue all of the goodies together. You simply throw all of the ingredients together into a bowl and stir it all up. Roll into little balls and let chill in the fridge just so they can set. You can use equal amounts of oats and coconut but my family is not too fond of it so I used more oats and less coconut. I used only 1/4 of a cup of chocolate chips so they you can still taste the other flavors. Chocolate can be pretty overwhelming. Also, I highly recommend using the flaxseed. I got a bag of ground flaxseed and I have been pretty crazy about it! I throw it into my morning smoothies and recently even cookies! I love it! It’s a fantastic source of Omega-3 fatty acids and fiber. So good for you!
