Peanut Butter Jelly Pancakes
- 1 cup all-purpose flour
- 2 Tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk
- 1 large egg beaten
- ⅓ cup creamy peanut butter
- your favorite jelly warmed up or syrup
- Heat up your griddle or a large skillet over a medium heat.
- In a large mixing bowl, whisk together the dry ingredients (flour, sugar, baking powder, baking soda and salt).
- In another mixing bowl, whisk together the wet ingredients (buttermilk, egg and peanut butter).
- With a wooden spoon or a rubber spatula, stir in the wet ingredients to the dry ingredients. Do not overmix! Lumpy batter is good.
- Spray your griddle with a cooking spray. Pour ¼ cup of batter for each pancake. It's thick so spread it a little bit. Cook pancakes for 3 minutes on each side or until they are cooked through.
- Repeat with the remaining batter.
- Serves with warmed up jelly or syrup.

I love blueberries and whipped cream on mine. Yummy!
My favorite topping for pancakes is sauted apples and cinnamon
My favorite topping is bananas and whipped cream
My favourite pancake topping is homemade fruit syrup. Blueberry, strawberry, raspberry, I don't care. These pancakes are right up my alley. I think this recipe is doable gluten-free - an all-purpose blend with the addition of 1-2 tsps of chia seeds (or xanthum gum for those who can have it). Definitely need to try it.
I like strawberrt syrup and whipped cream!
A book dedicated to just pancakes--how wonderful! These look absolutely perfect.

I'm old school and prefer my pancakes topped with butter and syrup 🙂
I freakin' love pancakes! Lately my favorite topping combination has been the ELVIS...Bananas (caramelized of course), peanut butter, bacon, a bit of honey and pure maple syrup. I highly recommend it. We have breakfast for dinner at least once a week, my kids just gobble it up. I'll have to try your recipe with the peanut butter in the mix, heck, they might be best with the banana and bacon tossed in too.
Well, these were meant for me. I love pb&js and to have them in pancakes is the ultimate treat. These look perfect...and now I have to try this. Usually, I just go for marmalade and maple syrup. xo, Catherine

If we're having waffles in our house, then it has to mean it's Sunday!
So usually, I'm making different pancakes on Saturday. Love toasted walnuts with lots of butter an maple syrup running down the sides!
Will need to check out the new book. On another note, would you have any recommendations on a great waffle maker, since your family enjoys them too. Thanks and have a delicious weekend.
Hi Karen! Thank you so much for the comment! I highly recommend this book if you have any pancake lovers in your family. As far as the waffle maker, I have a Cuisinart Classic Waffle Maker. You can see it here on Amazon: http://astore.amazon.com/cruncreaswee-20/detail/B00006JKZN
