Hey hey hey! It’s Thursday which means the weekend is almost here! And I’ve got something fabulous just for your weekend mornings! PANCAKES!
You may already know, that Sunday mornings are “pancakes and waffles for breakfast” mornings in our house. It’s our favorite morning in the whole week, because there is no rush and everyone can sit by the table and enjoy a stack of pancakes or waffles with their favorite toppings.
When I received the copy of my blogger friend, Karly’s, cookbook “Stack Happy”, I am not sure who was more excited about it – me or our kids! They LOVE pancakes so they feel like this book was made for them. They have so many recipes bookmarked for me to make and these Peanut Butter Jelly Pancakes were the first they wanted to try.
Karly’s cookbook is gorgeous. Just like on her blog, Karly tempts with beautiful photos, fantastic recipes and her hilarious writing. Her highly popular blog, Buns in My Oven, was one of the first blogs I found three years ago and have been reading it since then. Her recipes are creative yet easy for anyone to make. Going through the pages makes you want to whip up a stack immediately. My Hubby loves the savory chapter in the book and wants to try the Sweet Potato Latkes with Barbecue Pulled Pork and Coleslaw. I mean, just the name makes you hungry! With Karly’s book, you can have pancakes for breakfast, lunch, dinner and dessert.
I highly recommend reading the Tips and Techniques section in the book. Karly reveals her secrets to making the perfect stack of pancakes so you will never have tough and flat cakes.
I truly do not have one favorite chapter in this book because all of the recipes look absolutely delicious. But I have to say that the dessert one really drew me in. My sweet tooth was happy to see all of the stacks and the toppings!
In the end, the kids vote won (I knew there will come a day when they outnumber and outvote us!) and we chose the Peanut Butter Jelly pancakes from the breakfast chapter to share with you today. And boy, are they fantastic! Perfectly fluffy pancakes with just the right amount of peanut butter, topped with our favorite jelly (we used cherry preserves). You can go with Karly’s suggestion and make your own strawberry syrup! Either way, you will love them and love the “Stack Happy” cookbook!
