PUMPKIN SPICE COFFEE CREAMER
If you know me, you know that I am a huge coffee fan. And so is my Hubby. Each morning, before the kiddos wake up, we dedicate time to enjoy coffee together. Since I started making my own coffee creamer, the cup of joe is even sweeter. If I don't use my Cinnamon Roll Coffee Creamer, I add a splash of this Pumpkin Spice version. This coffee creamer will get you in the mood for fall and everything that comes with it.
This coffee creamer is crazy good! I used my homemade pumpkin pie spice (also crazy easy to make!), toasted it up in the saucepan, added pumpkin puree and milk with cream. Oh my! The fragrance of warm spices got me so excited for fall! I have to admit I took a sip of this creamer while still warm and it was everything I wanted it to be. Sweet, creamy and full of flavor.
HOW TO MAKE PUMPKIN SPICE COFFEE CREAMER?

In a medium saucepan, toast up spices for 1 minute over medium heat.

Using a whisk, mix in pumpkin puree and brown sugar. Let it all heat up for about 30 seconds.

Remove from the heat.

Add milk and cream (or half and half). Whisk until well mixed.

Pour into a heat-proof glass bottle or cool to room temperature and pour into a container with lid.

Store in the fridge for up to 5 days.

I thought this recipe was good. Not really sweet enough for me so I increased the amount of sugar. I wonder what would happen if I substituted sweetened condensed milk? It’s used to make pumpkin pie and perhaps it’ll boost the sweetness…? Also, I didn’t have allspice so I added ginger, cloves, (I like ginger and cloves a lot!) nutmeg and I used cinnamon sticks instead of ground cinnamon and 1/8 tsp of vanilla.

This is really delicious! It's not hot though, so a heat proof container to keep it in isn't required. You recipe says to remove from heat and add the milk and cream, which cool it down substantially. I find it needs less milk, which I will try next time.

I'm not the recipe blogger, but you could try adding a spoon more brown sugar or a pinch of vanilla powder. **Like they have at coffee shops. (I use the vanilla extract for baking, but it has an alcohol aftertaste I do not like in my drinks.)

Maybe try sweetened condensed milk? My pumpkin pie recipe calls for it so it would make sense to use it as creamer. I haven’t tried it yet but it might work. I have the same problem. I need way more sugar! I don’t know exactly how healthy it would be…

Hey this sounds amazing but is there a way to make it lactose free? I'm guessing I could use almonds milk in place of regular milk but I'm not sure what to use to substitute the cream. Would condensed coconut milk be too thick?

Hi Jessica! I made this coffee creamer with just almond milk and it was delicious. I did not try it with coconut milk so I can't say what the final result would be like. Definitely let me know if you try it!

I'm trying to make a vegan version and can not use either sources, but I don't know how much almond milk to use.

Is the pumpkin puree something you bought from the store or did you make yourself? If it was DIY, how'd you do that? Also, I always try to reduce the sugar in recipes to keep that down a bit, I wonder how the stevia/lt brown sugar blend would do in this recipe?

Hi Lisa! I used store-bought pumpkin puree from a can. Substituting stevia for brown sugar should work just fine. Whatever you use to sweeten your coffee will work. You can skip the sugar completely and just make the creamer with pumpkin and spices. Then add sweetener to your coffee. I often find that using vanilla extract adds sweet flavor and I don't add sugar. I hope this helps! Let me know if you make it! Thank you!
