These Crispy Zucchini Fries are coated with Parmesan breading and baked in the oven until golden brown. Perfectly crispy and delicious, served with ketchup or any dip you like!
Even without frying in oil, these zucchini fries are crispy, just like my baked Sweet Potato Fries. The addition of Parmesan to breading makes it delicious, just like in my Parmesan Roasted Cauliflower recipe!

Zucchini Fries
If you have an abundance of zucchini in your garden or need a new way to enjoy this summer vegetable, these Zucchini Fries are perfect! Simply cut zucchini into sticks, bread and bake in the oven. No need for frying in oil! The Parmesan coating is salty, crispy and delicious. I use it a lot with other vegetables and it is my favorite.
Ingredients:
- zucchini: I used one long one
- flour: I used all-purpose
- egg: beaten well
- breadcrumbs: I used Italian breadcrumbs but plain work too (you can add a little bit of Italian seasoning to it)
- Parmesan cheese: freshly grated is the best here
- cooking spray: I used olive oil kind
How to make Zucchini Fries?
- Start by washing the zucchini.
- Cut it in half, then each half in half again. Then slice into sticks.
- Prepare the breading station: flour, egg and breading.
- Dip each stick into flour, then egg and last in breading.
- Arrange on a baking sheet, spray lightly with cooking spray.
- Bake until golden brown.
Can I make these zucchini fries in the air fryer?
Yes! Coat the zucchini sticks in flour, egg, and breading, then arrange in a single layer in your air fryer basket or tray and cook at 425 degrees F for 10 to 12 minutes or until crispy.
Should I peel the zucchini before cooking?
I leave the skin on the vegetable but feel free to peel the skin if you don't like it, especially if it had imperfections. It is just a personal preference.
Storing leftovers:
The fries are best served the same day, as soon as they come out of the oven. The longer they sit, the less crispy they will be. I do not recommend making them ahead of time.
Can I freeze zucchini fries?
Yes! Once baked, cool the fries completely. Place in a freezer-safe bag or container and freeze for up to 3 months. Thaw them out before reheating.

Crispy Zucchini Fries
Ingredients
- 1 large zucchini
- ½ cup all-purpose flour
- 1 large egg
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- cooking spray
Instructions
- Wash the zucchini. Cut it in half, then each half in half again. Then slice into sticks.
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
- Prepare the breading station in 3 shallow bowls: flour, egg and breading. Add grated Parmesan cheese, Italian seasoning, garlic powder and paprika to breading and stir in.
- Dip each stick into flour, then egg and last in breading.
- Arrange fries on a baking sheet, spray lightly with cooking spray.
- Bake for 20 to 22 minutes or until golden brown.
