Roasting cauliflower is my favorite way of preparing it. This underrated vegetable has so much to offer and roasting it definitely tops the list. It brings out its delicious flavor and paired with garlic, Parmesan, and breadcrumbs create an irresistible dish. To make crunchy breaded cauliflower bites, you can use one of two methods. The final result is irresistible crunchy cauliflower bites!
This Roasted Garlic Parmesan Cauliflower is the best idea for a side dish featuring this vegetable. Aside from turning it into a vegetarian, healthy Alfredo sauce, or mashed cauliflower of course.
Ingredients:
- cauliflower - I used a medium size fresh cauliflower head. I do not recommend frozen cauliflower florets.
- butter - Not only does it allow the breading to stick to the cauliflower, but helps the florets brown nicely.
- garlic - Add flavor during roasting. I recommend using fresh garlic bulbs, but garlic powder works in a pinch.
- bread crumbs - I used plain, but Italian style or even panko can be used. If you don't have any on hand, make my homemade bread crumbs. It's so easy!
- Parmesan cheese - Adds toasted cheese flavor and crunch to the florets.
How to make roasted cauliflower?
- First cut the cauliflower head into florets, roughly the same size. You can slice the big florets in half if needed.
- You can either toss the cauliflower with olive oil or melted butter and then sprinkle with the breading mixture and stir to coat. I use this method in my The Best Roasted Broccoli recipe. The other option, that helps prevent any breading from falling off the cauliflower pieces, is to dip each floret into melted butter and then into the breading mixture. I use this method in my Baked Artichoke Hearts recipe and it's perfect!
How long does it take to roast cauliflower in the oven?
The time of baking cauliflower in the oven depends on the size of the pieces. If you cut the cauliflower head into florets, bite-size pieces, you need to preheat the oven to 400 degrees F for 25 to 27 minutes, or until the breading is golden brown. The whole cauliflower will take longer and the timing again will depend on how big the cauliflower head is. For an average size head, it may take anywhere from 40 to 50 minutes. Cauliflower steaks take about 15 minutes of baking time.
Helpful Tips!
- Cut the cauliflower into same-size florets so they all bake evenly.
- To save time, you can use a zip loc bag to coat the cauliflower. Place it in the bag, drizzle with butter, and shake to coat. Add breading, shake again, and place all on a baking sheet.
- After baking, drizzle hot sauce over the florets for the hot wings flavor!
Recipe FAQs:
I recommend using fresh cauliflower. Frozen florets need to be thawed and will still have excess moisture. This can cause the cauliflower to burn and not roast properly.
Of course! Preheat the air fryer to 400 degrees F and roast the cauliflower for 15 minutes. An air fryer will usually cut the roasting time in half. Make sure to not overcrowd the basket or tray. The air needs to circulate around the food.

Roasted Garlic Parmesan Cauliflower recipe
Ingredients
- 1 medium cauliflower head
- ½ cup butter melted
- 2 garlic cloves minced
- 1 cup Italian or plain breadcrumbs
- ½ cup grated Parmesan cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400℉. Line a large baking sheet with parchment paper. Set aside.1 medium cauliflower head
- Remove all leaves from cauliflower head. Cut cauliflower into florets, all roughly the same size. You can slice the large florets in half, if needed.
- Melt butter and in a small bowl. Add garlic and stir in.½ cup butter, 2 garlic cloves
- Place breadcrumbs, salt, pepper and Parmesan cheese in another bowl.1 cup Italian or plain breadcrumbs, ½ cup grated Parmesan cheese, ¼ teaspoon salt, ¼ teaspoon black pepper
- Dip each cauliflower piece into butter first, then to breadcrumbs.
- Place each breaded piece on prepared baking sheet. Repeat until you use up all cauliflower.
- Roast cauliflower for 35 to 32 minutes, or until the breading is golden brown.

- This cauliflower can be served as a side dish or an appetizer along with a dipping sauce, like Ranch.
- This breading method prevents the coating mixture from falling off the cauliflower pieces. You can also pour the melted butter over cauliflower bites in a bowl and toss gently to coat. Then sprinkle with breading mixture and stir to coat. Bake as instructed in the recipe above.

LOVED this recipe!! I needed more than 1/2 c. Butter and 2 cloves of garlic but breadcrumbs and cheese qty was spot on. Prep time dipping and breading took longer than 10 mins and a bit messy. I made the recipe and loved it, but I did find it a little time consuming. I tried it again and put the butter in a gallon ziplock bag, added the cauliflower and shook to cover. Very good. The only alteration I make is I use 1/2 cup Italian bread crumbs and 1/2 cup panko breadcrumbs instead of 1 cup breadcrumbs. Makes it a little crunchier with the panko. Made many times.

I made this tonight, and it was delicious!!!!! I’ve tried making breaded cauliflower before, but it was never as good as this! I followed your recipe, the only thing I didn’t add was salt and pepper. I combined some tips. First I wrapped the head in paper towels and microwaved for 4 minutes. Let it cool, easy to slice and cuts down the baking by about 15 minutes. Then I followed the recipe but after they started to brown I pulled the pan out of oven. I drizzled a combination of Ken's Dressing Ginger Sesame and honey. Back in oven to make the dressing sticky. Yummy.

Pretty good, I don't want to give a star rating because any and all mistakes were my own! I added a little sweet potato along with the cauliflower, because I had it. I took the advise that someone said, and used spray Pam instead of butter. I think that made the breading stick a bit less. I also used the canned grated parm instead of fresh. I was searching for an air fryer version and came up empty so tried using my own times in the fryer and they were AMAZING! Instead of using butter I opted for nutiva organic coconut oil (buttery flavor). I also added garlic powder (1/2T) to the plain Panko. Followed the directions Preheated the air fryer @400 then cooked for 10 minutes turning at 5 minutes. They were perfectly done inside and so crispy and tasty!

I've used this method the day before, placing them uncooked on a cookie sheet, then into the fridge until ready to bake the next day. I think that actually helped the crumbs stick better! 🙂

Hi, Rose....I imagine re-heating them may result in them being less crispy unless you use a high heat for a shorter period of time. I didn't pre-bake mine the day I stuffed them into the fridge, just baked as instructed the day I needed them. I also have experimented with other methods prior to finding this recipe repeating the butter and crumb dipping...in other words, butter, crumb, butter, crumb. I think I'll do that again on Saturday when we entertain our Daughter and her family at our usual pre-Christmas dinner. I'll serve souvlaki, rice pilaf, the cauliflower, my Hubby's semi-famous Caesar salad, and sticky toffee pudding from another recipe site here in Canada. I hope the cauliflower is enjoyed by your family! We love it! I've thought about doing it with a mixture of cauliflower and broccoli florettes...might make a more festive presentation this time of year..:)

Tasted delicious!!! Will make again and often!! Does reheat well in oven, but as with anything is always better fresh. If traveling I would suggest placing the cauliflower in a ziplock bag with the garlic butter and the breading in a separate bag and cooking when you arrive as it does not take long. It does reheat pretty well though. Thank you for this delicious recipe! The only thing I changed was I added a packet of store brand dry ranch dressing mix. It was amazing!

I made this as stated (dipped in butter and then in crumbs) and then halfway through I got lazy and poured butter over the rest and tossed it in bread crumbs. I had 2 different pans in the oven. While they were both good, the one dipped in butter (as the recipe suggests) is WAY better. Do yourself a favor and make it as stated.

Loved this, even my non-veggie eating daughter liked it too. 🙂 I started with dipping each piece individually as directed, but gave up quickly and just poured butter over cauliflower in the bowl, tossed it. Then poured breadcrumb mix over and tossed.
I would probably turn 1/2 way thru cooking for even browning on both sides.

Hi Anna, just tried your recipe and it is super tasty plus easy to make. I have an electric stove so am usually concerned with how hot it runs. This led me to researching heat points of different oils. I saw that almond oil has a heat point of 460 to 480°F plus it packs a nice vitamin E percentage so I bought a bottle and followed your recipe as written. The fiancé and I loved these awesome bites. Wow and thank you! 🙂

This cauliflower is so amazing that my husband and I just can't get enough of it!!! If you don't really care for cauliflower, try this and I will bet that you will change your mind. One thing I will recommend, use the Italian bread crumbs.

Second time making this!! I knew how good it was going to be after carefully crafting the first time, so this time I got impatient and dumped everything together in a 13x9 pan - just as good. I ate the entire roast cauliflower by myself- no shame!

I do not recommend using frozen cauliflower as it will release water and the breading won't be crunchy and each piece will be soggy.

When Ithink of the time I have spent frying cauliflower over the past 50 years and I find this gem.Thank you for sharing my family always loved this but the time involved ugh.so needless to say since I found your method I made it several times and shared it with others.Id like to share my different ways of serving it ,with just more grated cheese is tops for me , but my family also likes when I put sauce on top and add mozzarella cheese and bake or seve it as appetizer with dipping sauce ranch,blue cheese or spaghetti sauce.again thanks.ps it can be made GF.

Hi Terry! I apologize for the late reply. If you bread the cauliflower a day ahead, the breading might get soggy in the fridge. I recommend making it the same day. Hope this helps!
