Roasted Garlic Parmesan Cauliflower Recipe - crispy cauliflower bites with garlic Parmesan breading, baked in the oven instead of fried. So tasty!
Cauliflower is my favorite vegetable. When I don't roast it, I make Mashed Cauliflower and my Cauliflower Alfredo Sauce.
Roasting cauliflower is my favorite way of preparing it. This under-rated vegetable has so much to offer and roasting it definitely tops the list. It brings out its delicious flavor and paired with garlic, Parmesan and breadcrumbs create an irresistible dish. To make crunchy breaded cauliflower bites, you can use one of two methods. The final result is irresistible crunchy cauliflower bites!
This Roasted Garlic Parmesan Cauliflower is the best idea for a side dish featuring this vegetable. Aside from turning it into a vegetarian, healthy Alfredo sauce, or mashed cauliflower of course.
HOW TO MAKE ROASTED CAULIFLOWER?
- To make the best roasted cauliflower, first cut the cauliflower head into florets, roughly the same size. You can slice the big florets in half, if needed.
- You can either toss the cauliflower with olive oil or melted butter and then sprinkle with the breading mixture and stir to coat. I use this method in my The Best Roasted Broccoli recipe. The other option, that helps prevent any breading from falling off the cauliflower pieces, is to dip each floret into melted butter and then into the breading mixture. I use this method in my Baked Artichoke Hearts recipe and it's perfect!
HOW LONG DOES IT TAKE TO ROAST CAULIFLOWER IN THE OVEN?
Time of baking cauliflower in the oven depends on the size of the pieces. If you cut the cauliflower head into florets, bite-size pieces, you need to preheat the oven 400 degrees F for 25 to 27 minutes, or until the breading is golden brown. Whole cauliflower will take longer and the timing again will depend on how big the cauliflower head is. For average size head, it may take anywhere from 40 to 50 minutes. Cauliflower steaks take about 15 minutes of baking time.

Seriously, one of the best recipe for cauliflower that my family tasted. I added a few red pepper flakes for a punch. Sent this to several friends. Thank you for this easy recipe!
Made this for my coworkers and they didn’t stop raving about it. We have another pot luck scheduled and everyone asked if I could bring the roasted cauliflower dish again. This time I decided to double the recipe and make it for a Super Bowl Sunday appetizer and the pot luck on Monday. The best part of all is how easy it comes together.
That's absolutely fantastic! I am so glad the dish was such a hit! Thank you for making my recipe, Rick! Enjoy Super Bowl! Go Chiefs!

LOVED this recipe!! I needed more than 1/2 c. Butter and 2 cloves of garlic but breadcrumbs and cheese qty was spot on. Prep time dipping and breading took longer than 10 mins and a bit messy. As suggested, I'll try pouring butter and sprinkle breading next time. I'll also experiment w/other seasonings in the breading mix. All in all this is a really tasty recipe!!
Loved the recipe! Cut the butter in half and used olive oil, which I love. Mistake. Stay with the butter or ghee. Everyone loved it!
Pat H says
The cauliflower was delicious. The recipe was easy to make and my cauliflower came out just like the picture. I did not have Italian bread crumbs and substituted panko crumbs. Very crispy. Definitely a keeper! Thank you!
I am so glad the cauliflower was a success! Thank you, Pat!
We enjoyed this recipe very much. We did ours in the air fryer and they came out very delicious.
Perfect! I am so glad it was a success! Thank you, Gerry!

Hi, my name is Gisela and I'm interested to know what temperature you used and for how long. Did you steam the Cauliflower before putting it in the Air Fryer. Hope to hear from you, thanks a lot Gisela...

I made the recipe and loved it, but I did find it a little time consuming. I tried it again and put the butter in a gallon ziplock bag, added the cauliflower and shook to cover. I then added the breadcrumbs and parmigiana mixture, shook again. Placed on the pan and baked as directed and it turned out great. Thanks for the recipe!
Hi Rebecca! Yes, the ziploc bag works great! Thank you for making my recipe!
Since I only eat Keto, our family left out the bread crumbs and added a touch more parmesan cheese. Delicious.
This is definitely the best cauliflower recipe I have tried. I will be using this again. I did use half regular and half panko breadcrumbs. Like the crunch of the panko. This came out crispier than any other recipe I have used.
That's wonderful! I am so glad you enjoyed the dish! Thank you, Andrea!
Deborah K Campbell says
Very good. The only alteration I make is I use 1/2 cup Italian bread crumbs and 1/2 cup panko breadcrumbs instead of 1 cup breadcrumbs. Makes it a little crunchier with the panko. Made many times.
Thank you for making my recipe, Deborah! I love the addition of panko!
Super easy and super tasty. I'm going to try it in my air fryer next time. I highly recommend this recipe.
Thank you so much, Ginny! I've made it in the air fryer and it works great!
Thank you for this delicious recipe! My daughter is a vegetarian and this makes a great meal. I usually make a double batch, it's so good. When I make the recipe, I dip the cauliflower florets in melted unsalted butter with garlic and then roll them in a mixture of Italian and plain breadcrumbs with the grated cheese (I use both regular and panko style breadcrumbs). Once again, thank you!! The dish is one of pur favorites, and plan on adding it to my Christmas menu this year.
Love this recipe and have made it several times. I have passed along your recipe to multiple people that I’ve made it for as well.
Kristine S says
This is delicious! It reminds me of how my mother-in-law made it. Only I think she might have sautéed it in EVOO. But this is awesome, no matter how it is cooked! So much flavor. Thank you!
My husband and I are obsessed with this recipe. Neither of us are typically big fans of cauliflower, but this recipe is one of our new favorites. I definitely recommend... I shared it with my sister and her kids even ate it... and what kids like cauliflower? Thank you!
Made these as a side for dinner tonight. Never had cauliflower before but WOW! New fav recipe and perfect side! Thanks so much for sharing!
Thank you for this amazing recipe!! I never make comments but I have to for this one. My husband hates cauliflower so I made it for everyone else. Their comments convinced him to try it...he was convinced. These cauliflower florets are crispy on the outside, soft on the inside and oh so delicious. My husband doesn't like garlic but he loved these. I made a full pan of them (1 large head of cauliflower) and doubled the butter but I didn't need to double the bread crumbs. Thank you THANK you!! This is going in my permanent rotation for parties and for ME !!! Loved them! All the kids ate and enjoyed them too. WOW!
Hi Melissa! Thank you so much for making my recipe! I am so glad the cauliflower was such a hit! Yay! This recipe tends to turn people into big cauliflower fans. 😀 Have a beautiful day!
I made this tonight, and it was delicious!!!!! I’ve tried making breaded cauliflower before, but it was never as good as this! I followed your recipe, the only thing I didn’t add was salt and pepper. My Panko breadcrumbs were seasoned, but I still added garlic powder and Parmesan cheese (from the shaker 🤫)! I love that the recipe calls for butter, and not eggs! I used vegan butter! Thank you so much for this recipe!!!!

I combined some tips. First I wrapped the head in paper towels and microwaved for 4 minutes. Let it cool, easy to slice and cuts down the baking by about 15 minutes. Then I followed the recipe but after they started to brown I pulled the pan out of oven. I drizzled a combination of Ken's Dressing Ginger Sesame and honey. Back in oven to make the dressing sticky. Yummy.
Lois Demers says
Pretty good, I don't want to give a star rating because any and all mistakes were my own! I added a little sweet potato along with the cauliflower, because I had it. I took the advise that someone said, and used spray Pam instead of butter. I think that made the breading stick a bit less. I also used the canned grated parm instead of fresh. Will follow recipe next time.
I don't comment alot.... but this recipie is simple and so tasty.
I put the florets is a bowl dumped the butter mix covered and shaked.
Then put the bead crumb mix in and shaked it and dumped on a sheet pan.
I was searching for an air fryer version and came up empty so tried using my own times in the fryer and they were AMAZING! Instead of using butter I opted for nutiva organic coconut oil (buttery flavor). I also added garlic powder (1/2T) to the plain Panko. Followed the directions Preheated the air fryer @400 then cooked for 10 minutes turning at 5 minutes. They were perfectly done inside and so crispy and tasty!
Thanks for sharing using air fryer Kim.trying this now.
These are delicious!
I want to serve them for a large dinner party but would need to make them in advance (day before). What would you recommend the temperature and time to reheat?
I've used this method the day before, placing them uncooked on a cookie sheet, then into the fridge until ready to bake the next day. I think that actually helped the crumbs stick better! 🙂
That's a great idea...I just need to make at least 3 batches of theses along with several other dishes. I won't have the oven space/time to do it same day. Reheating would be ideal. Any thoughts on reheating and the temp and time to do? Thanks!
Hi, Rose....I imagine re-heating them may result in them being less crispy unless you use a high heat for a shorter period of time. I didn't pre-bake mine the day I stuffed them into the fridge, just baked as instructed the day I needed them. I also have experimented with other methods prior to finding this recipe repeating the butter and crumb dipping...in other words, butter, crumb, butter, crumb. I think I'll do that again on Saturday when we entertain our Daughter and her family at our usual pre-Christmas dinner. I'll serve souvlaki, rice pilaf, the cauliflower, my Hubby's semi-famous Caesar salad, and sticky toffee pudding from another recipe site here in Canada. I hope the cauliflower is enjoyed by your family! We love it! I've thought about doing it with a mixture of cauliflower and broccoli florettes...might make a more festive presentation this time of year..:)
Excellent. Big hit at our table. Definite keeper

This recipe was amazing!! I’ve made it twice this week and it’s only Thursday! We are pretty low-carb so paired it with lettuce wrapped tacos. It was the perfect side.
Awesome! I am so glad you are enjoying the cauliflower, Natalie!

I never leave reviews but this cauliflower was TOO good not to. Made it for a dinner party with beautiful meats, and everyone spoke about the cauliflower. It is so so good. I recommend adding some of your favorite spices if you use regular plain breadcrumbs.
Yay! I am so glad you love it, Cristina! Thank you for making my recipe and for the review!
Sheila B says
This was really good. Although I substituted the butter with non-stick cooking spray to cut down on the fat, since we're on a low fat diet. I would recommend it highly.
Thanks for the cooking spray tip, I wanted to avoid the butter also!
Tasted delicious!!! Will make again and often!! Does reheat well in oven, but as with anything is always better fresh. If traveling I would suggest placing the cauliflower in a ziplock bag with the garlic butter and the breading in a separate bag and cooking when you arrive as it does not take long. It does reheat pretty well though. Thank you for this delicious recipe! The only thing I changed was I added a packet of store brand dry ranch dressing mix. It was amazing!
Did you add the Ranch dressing mix to the butter or to the breadcrumbs?
Jonathan P Robinette says

This is delicious! Looks like tater tots but it’s so so much better. We were given a good size baked ham so I am trying all
Different veggie recepies so we basically have the veggies with a “side of ham”. This was a hit!
Hi Laura! I am so happy to know you enjoy the cauliflower! Thank you for making my recipe!
Jessica Nathanson says
After this cooked, the breadcrumbs weren't really stuck to the cauliflower so it was like eating a mouthful of breadcrumbs along with the cauliflower...I wonder what I did wrong? the crumbs were stuck to them before they went in!
Absolutely delicious!! I made this last night with crushed pork rinds, Italian seasoning and just a touch of the Italian breadcrumbs. Also I used shredded and grated parmesan.
Thank you so much for this wonderful recipe!! I just had a bite of it cold and oh man, it's still delish! That's when I knew that I had to do a review!!

One Word: WOW!
I followed the directions for this recipe chapter, rhyme and verse and it finished PERFECTLY. It even looked like your recipe photos! I will be making this as a side dish for Easter for my family and a few friends.
I'm looking forward to using your suggestion to use Italian seasoned bread crumbs as a variant the second time around to see how I like it. (I know that I will.) Thank you for sharing this.
This was delicious! Thank you for sharing♥
this was the most amazing recipe I have tried for cauliflower
Yay! Thank you, Shelley!
I dont typically like cauliflower but Omg this was amazing!
Hands down the best cauliflower I’ve ever eaten let alone made. My 4 year old gobbled it all up quick, my husband was raving about it. He said I’ll be making this more often, lol. I was making yum sounds when I ate it.
I love that! Thank you so much, Chandra!

Best cauliflower I’ve ever had .
Thank you, Mary!
Michelle Wood says
I made this and it was delicious but just curious about the nutritional information. What is the serving size and what accounts for the saturated fats? Seems high.
I made this tonight. While it had great flavor, the cauliflower was mushy after 30 minutes of cooking.
Lisa Kelly says
Hi Anna - would this recipe work with Gluten free breadcrumbs, as well as the roasted broccoli recipe????
I used Ian's GF Panko and they were PERFECTION. I did blitz it for a sec in my magic bullet, but that's just preference!
Thank you so much, Alyssa!
I also only had panko in the pantry, toasted the panko a little before mixing in the parm - best cauliflower recipe ever!!
Love that idea, Jeanne! Thank you!
Thank you so much for sharing this recipe. It is quick and easy to make, yet the flavor is truly restaurant worthy! Bravo!
Evelyn OBrien says
As everyone else stated it's excellent! I did half in bread crumbs and 1/2 without just sprayed PAM on them because I'm dieting, but did taste the recipe cauliflower - OMG- so good- thank you.
I made this last night with 2 substitutions, I used garlic infused olive oil (in place of butter & garlic) and I used panko crumbs (because that is what I had). So this vegetarian dish became vegan. Delicious!
So easy and SO delicious! Thank you!
My girls love cauliflower as they are vegetarian and I’ve run out of ways to make it. I’m so happy to have found this recipe. It’s absolutely delicious and super easy to make. I melt the butter in a bowl add the chopped garlic then toss the cauliflower in it and then individually coat them with the crumbs. I used panko. You can even toss these with buffalo sauce after they’re done. There’s a multitude of things you can do. I love it ! Thank you so much for sharing !
Thank you so much for the recipe. I wish there was a way I could post a picture. Its my favorite way of cooking cauliflower now.
Hi Kini! Anna has an Instagram page so you can post a pic there! How-to is outlined near the top of this page. 🙂
Hi there - can you make these ahead of time and reheat just before serving?
Naomi Rappaport says
Do you think this will work with panko
Yep! It will just be more crunchy.
Mary McKee says
Thank you, Mary!
I made this as stated (dipped in butter and then in crumbs) and then halfway through I got lazy and poured butter over the rest and tossed it in bread crumbs. I had 2 different pans in the oven. While they were both good, the one dipped in butter (as the recipe suggests) is WAY better. Do yourself a favor and make it as stated.
Loved this, even my non-veggie eating daughter liked it too. 🙂 I started with dipping each piece individually as directed, but gave up quickly and just poured butter over cauliflower in the bowl, tossed it. Then poured breadcrumb mix over and tossed.
I would probably turn 1/2 way thru cooking for even browning on both sides.
Thank you so much, Margaret! I am so glad it was a hit!
Great recipe!! My husband does not like cauliflower but really liked this!! I used half bread crumbs and half panko with a pinch of cayenne. Will make again!!
I am so glad it was a hit! Thank you, Kristin!
This recipe was outstanding. I reheated them in the airfryer and what I might do is just cook them in the airfryer next time instead of the oven to get the crispyness. They were really good!
Fantastic! Thank you, Latonia!
This was BOMB y’all. I did olive oil instead of butter and it was so tasty. Gonna be my new go-to pasta substitute
Thank you so much, Lindsay!
Not a huge cauliflower fan but this recipe was delicious and super easy. Will definitely make this again.
Thank you so much, Judy!
love this recipe! only had whole wheat bread crumbs, but was just as delicious! me and my sister are not cauliflower fans but now we are! thank you so much for sharing this recipe!!!!!!!
First and only way I will roast cauliflower! Thank you so much!
Yay! Thank you, Katie!
Excited to try this recipe. looks good!!! Just a question, tried looking through comments but didnt see any answer. Is there anything I can prep beforehand? With two kids, dinner time can get hectic so I try to prep what I can during naptime. Thank you!
I was going to try to complete all the breading and arrange them on the sheet tray. Pop it in the fridge until I’m ready to roast. I thought about parboiling the cauliflower to shorten the roasting time but I’m not sure how the coating will do with a shorter cook time.

Can other cheeses besides parmesan be used?
Brandi Stanner says
I'm making this for Thanksgiving side. Have to travel about an hour to my sons. Does anyone know how well this reheats?
Lauren Bradford says
I'm wondering the same thing I'm taking it on a long trip to my family's thabskgiving. I wish someone would respond if they knew.
Hi Brandi and Lauren! If you want to make this cauliflower ahead of time and reheat it, it should be fine. The breading might not be as crispy though. Of course, the best would be, if at all possible, to roast it at your location before serving. It will have the best texture. I hope this helps!
So yummy!!! I made marinara sauce with sausage to put over the top...definitely will be making again 🙂
Awesome! Thank you so much, Leilani!
I made this for myself the first time I tried this recipe. I ate a whole head of cauliflower to myself! It was that good! Three nights later I made it for my stepmom, dad, and brother. And each of them took seconds, and my stepmom wanted the recipe. Such a simple thing to make and it tastes so good! I added 1/2 cup of grated Parmesan as well the second time and it tasted good too! 🙂
Sorry I meant shredded cheese *
This was beyond good!! Took to a friends for dinner & it was a HUGE hit. Four kids we’re fighting over it, one head was clearly not enough. My daughter, who would never even try cauliflower went in for more.
I used a little butter & more olive oil, doubled the garlic, skipped the salt, I find parm cheese is salty enough. Used seasoned panko breadcrumbs & can’t wait to make it again, this time will use 2 heads of cauliflower
I used purple cauliflower. It was fun, colorful and delicious.
Hi Sarah! Wow! Love that you used purple cauliflower! Thank you for sharing!
Theresa Curreri says
I like to know if Purple Cauliflower taste same at white Cauliflower?
Hi Theresa! From my experience, colored cauliflower (purple, orange, green) tastes just like the classic white cauliflower. I hope this helps!
Wow, we love this recipe! Super easy and delicious 👍
Thank you so much, Rebecca!
How many servings? (247 cal / serving)
I think I read 6 servings but was wondering the same thing.

Anna, this recipe looks awesome, was wondering if you ever cooked this recipe in an air fryer? Any suggestions you have are greatly appreciated if you haven't.
Hi Eileen! I have not but it should work just fine. I would suggest cooking it for half the time. Air fryers usually cook faster. I hope this helps!
I wonder if crumbs would fly off in air fryer
Hi Jerri! I never had a problem with breaded food having crumbs fly off.
Hi Anna, just tried your recipe and it is super tasty plus easy to make. I have an electric stove so am usually concerned with how hot it runs. This led me to researching heat points of different oils. I saw that almond oil has a heat point of 460 to 480°F plus it packs a nice vitamin E percentage so I bought a bottle and followed your recipe as written. The fiancé and I loved these awesome bites. Wow and thank you! 🙂
Hi Merce! Thank you for sharing your substitutions! I am so glad the cauliflower was a hit!
Really delicious!! ❤️ Everyone said it was the best cauliflower they’ve had. Thank you 😊
I am so glad it was a hit! Thank you, Kathy!
This cauliflower is so amazing that my husband and I just can't get enough of it!!! If you don't really care for cauliflower, try this and I will bet that you will change your mind. One thing I will recommend, use the Italian bread crumbs.
Hi Sonya! Thank you so much! I am so glad it's such a hit with you and your husband. It's a family favorite here too!

Second time making this!! I knew how good it was going to be after carefully crafting the first time, so this time I got impatient and dumped everything together in a 13x9 pan - just as good. I ate the entire roast cauliflower by myself- no shame!
I made it the first time and ate the whole thing. I had to go back to the store for another cauliflower and bought broccoli along with!! Both yummy prepared the same way! 😋😊
Haha! I love that, Jennifer! I am so glad the cauliflower (and broccoli!) was such a hit! Thank you for trying my recipe!
Anna, ,thank you! I made this exactly as recipe states and it was delicious. It has wonderful flavors.
Yay! I am so glad you love it, Kate!
This is a really good recipe. Have now made multiple times and everyone loves them.
Thank you, Marsha!
Just made this, using crushed pork rinds and adding Italian Zest seasoning from Flavor God, instead of the carb-heavy bread crumbs! It was amazing!
Thank you so much, Sharon!
How do I make this dish keto friendly?
Skip breadcrumbs and use crushed pork rinds. I hope this helps!
We loved this! Simple and easy. Making another batch tonight. Thanks!
Thank you, Dave!
Awesome, everyone loved it
Fantastic! Thank you, Kim!

Will almond flour work in place of bread crumbs?
Hi Mary! I did not test this recipe with almond flour so I can't say what the result will be. So sorry!
I use olive oil, nutritional yeast and chopped almonds in place of butter cheese and bread crumbs

This recipe turned my whole family into cauliflower fans! It's unbelievably delicious! Thank you so much!
Isn't it just the best? Thank you so much, Natalie!
When you say grated Parmesan cheese, are you talking about the kind in the green can such as made by Kraft? Or are you talking about freshly shredded Parmesan cheese?
Hi Kathy! Either one works great in this recipe.
Great recipe! My husband loved this! I also loved this recipe as I am not a cauliflower fan. Will use this recipe again, Thanks!
Hi Diane! Yay! That's fantastic! Thank you so much!
Can you use frozen cauliflower?
I do not recommend using frozen cauliflower as it will release water and the breading won't be crunchy and each piece will be soggy.
Love this recipe! First time in 16 years together that I've seen my husband eat cauliflower. Now he even suggests making it and we prepare it this way around once a week.
Hi Robin! That's amazing! Yay! I am so happy you and your husband enjoyed my cauliflower recipe. Thank you so much!!
Hi can you use panko bread crumbs?
Yep, panko works great too!
Holy moly! This is AMAZING. I had it with steak and salad. As soon as I took a bite I stopped eating everything else on the plate. Even went back for seconds without touching another thing outside this cauliflower.
Has anyone tried this recipe with Panko?
Hi Cindy! Panko will make the cauliflower bites even more crunchy. Still delicious!
When Ithink of the time I have spent frying cauliflower over the past 50 years and I find this gem.Thank you for sharing my family always loved this but the time involved ugh.so needless to say since I found your method I made it several times and shared it with others.Id like to share my different ways of serving it ,with just more grated cheese is tops for me , but my family also likes when I put sauce on top and add mozzarella cheese and bake or seve it as appetizer with dipping sauce ranch, blue cheese or spaghetti sauce.again thanks.ps it can be made GF.
A HUGE hit. Everyone loved it!!!
That's wonderful! Thank you so much, Dean!

Could I make this the day before, leave on a sheet pan in the fridge and bake the next day?
I liked to do this too. Did you get any replies?
Hi Terry! I apologize for the late reply. If you bread the cauliflower a day ahead, the breading might get soggy in the fridge. I recommend making it the same day. Hope this helps!
This was incredible!! And easy to make!! Wasn’t crunchy though but the bits around were nice and crunchy! Thank you!
Yay! Thank you so much, Allison!!
This recipe looks delicious! I was looking at the nutritional information and was curious how much is one serving?
