We all have those days when we need dinner on the table quickly. My air fryer turns out to be invaluable when I am in a pinch. It cooks salmon to perfection in half the time and fries chicken nuggets until golden and crispy. I can also whip up veggies in minutes, like these sweet baby carrots. They are surprisingly delicious when air fried!
I used baby carrots because my kids enjoy them so I always have them on hand, they are sweet and quick to prepare. No chopping or peeling is needed! Just toss them with oil and seasoning and air fry until tender and delicious! Besides, the prep and clean-up are a breeze when I use the air fryer instead of the oven. Win-win!

Ingredients:
- carrots: I used baby carrots but regular carrots, cut into large chunks work too;
- oil: helps the seasoning stick to carrots and ensures nice browning;
- seasoning: paprika, garlic powder, salt, and pepper;
- Parmesan cheese: adds salty, cheesy flavor.
How to cook carrots in the air fryer?
- Start by peeling and washing carrots. I used baby carrots so I just gave them a rinse. Pat dry with a paper towel.
- Drizzle oil over carrots. Sprinkle seasoning and toss everything to coat.
- Preheat your air fryer to 360 degrees F.
- Arrange carrots in a single layer in the air fryer basket.
- Cook for 10 to 12 minutes, shaking the basket halfway through cooking time.
- Remove carrots from the air fryer and let cool for a few minutes.
- Serve garnished with chopped parsley.

If you have any leftovers, I recommend storing them in a container with a lid, in the fridge for up to 3 days. You can easily reheat them in the air fryer at 360 degrees F, for 2 minutes.
Variations:
- you can use any carrots you like, just make sure to cut them into same-size pieces
- skip the seasoning and Parmesan and use honey or brown sugar and cinnamon for a sweet version of this dish
- add breadcrumbs to Parmesan cheese and toss with carrots, to add crunchy texture
What do air-fried carrots taste like?
I was very surprised at how tender and juicy the carrots turned out. If you use baby carrots or carrots cut into thick chunks, don't expect them to be crispy. For that, you should slice them into fries (thin sticks) or thin disks.
