These easy skewers with shrimp and smoked sausage are just that. Quick to prep, quick to cook and packed with flavor. You can prep them a day before and cook the next day! I added veggies for texture and color but you can serve them with Dirty Rice or Creamy Polenta.
I added peppers and onions to my skewers, mushrooms and zucchini work great too! This dish is low-carb, just like my Baked Pork Chops and Air Fryer Cauliflower.
Ingredients:
- shrimp: I recommend jumbo size,
- sausage: I used smoked, but Polish or even andouille works great,
- oil: olive or vegetable,
- seasoning: I used my homemade Cajun mix.

I added sweet peppers and red onion. You can use other vegetables or skip them altogether if you are going to serve this dish with a vegetable side.
How to make shrimp and sausage skewers?
- Start by preparing the shrimp. Peel, devein, rinse, and pat dry with a paper towel.
- Slice sausage, peppers, and onions (if using).
- Preheat the grill.
- Place all ingredients in a bowl, drizzle with oil, and add seasoning. Toss together.
- Place shrimp, sausage, and veggies on skewers.
- Grill for about 3 minutes per side.
- Serve.
How long does it take to grill shrimp skewers?
Shrimp cooks really fast in a skillet and on the grill. These skewers take about 2 to 3 minutes of cooking time, per side. As soon as you see the shrimp turn pink, flip the skewer and cook the other side.
Can I prep this dish ahead of time?
Yes! That's what I do. I mix shrimp and sausage with oil and seasoning in a bowl, cover it with plastic wrap and store it in the fridge overnight. The next day, just place everything on skewers and cook!

- 12 oz smoked sausage
- 2 tablespoons olive oil
- 1 ½ teaspoons Cajun seasoning
Instructions
- Prep the shrimp: peel, remove the vein, rinse and pat dry with a paper towel.1 lb jumbo shrimp

- Preheat the grill. Soak wooden skewers in water.
- Place shrimp and sausage in a bowl, drizzle with oil and add seasoning. Gently stir together.2 tablespoons olive oil, 1 ½ teaspoons Cajun seasoning
- Place shrimp, sausage, and veggies on skewers.
- Place on hot grill and cook 2 to 3 minutes per side. When the shrimp turns pink, flip the skewer and cook the other side.
- Remove from grill and let sit for a couple of minutes.
- Serve.
