PEANUT BUTTER CHOCOLATE REESE'S COOKIE BARS

What do you get when you have a bag of chocolate chips and a package of Reese's peanut butter cups staring at you from a shelf or worse -  calling you from your pantry? Cookie bars! Buttery, sweet, thick and gooey cookie bars. The thickness of these cookie bars is unreal. These babies have some height! Every crumb is buttery and sweet and it melts in your mouth. SO GOOD!

Also, do you know how hard it is to keep a bag of Reese's untouched when you have three peanut butter cup loving kids? AND a Husband? Aaand my own late night cravings? #TheStruggleIsReal Peanut butter and chocolate combo is one I can't resist. My Peanut Butter Chocolate Chunk Cookies are the proof. So good!

HOW TO MAKE PEANUT BUTTER REESE'S COOKIE BARS?

  • Preheat oven and line a square baking pan with parchment paper or aluminum foil. Set aside.
  • In a medium mixing bowl, whisk together the dry ingredients. Set aside.
  • In a large mixing bowl, whisk melted butter with peanut butter until smooth. Add both sugars and whisk until well mixed. Add vanilla and egg and mix well.
  • Add dry ingredients and stir in with a spatula. Add chocolate chips and stir in. The dough should be soft but not at all sticky.
  • Place dough in prepared pan and press, smoothing out the top. Sprinkle remaining chocolate chips and chopped Reese's candy over the top and gently press into the dough.
  • Bake bars for 21 minutes. Cool in pan for 10 minutes, then transfer onto a cooling rack to cool completely.
  • Cut and serve.

Ingredients
 
 

  • 6 Tablespoons unsalted butter melted
  • ½ cup creamy peanut butter
  • ¼ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 Tablespoon cornstarch
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 package Reese's peanut butter cups (about 8) unwrapped and chopped

Instructions
 

  • Preheat oven to 350 ℉.
  • Line a 8" square baking pan with parchment paper or aluminum foil. Set aside.
  • In a medium mixing bowl, whisk together the dry ingredients (flour, baking soda, cornstarch and salt). Set aside.
  • In a large mixing bowl, whisk melted butter with peanut butter until smooth.
  • Add both sugars and whisk until well mixed.
  • Add vanilla and egg and mix well.
  • Add dry ingredients and stir in with a spatula.
  • Add ¾ cup of chocolate chips and stir in. The dough should be soft but not at all sticky.
  • Place dough in prepared pan and press, smoothing out the top. Sprinkle remaining chocolate chips and chopped Reese's candy over the top and gently press into the dough.
  • Bake bars for 21 minutes. Cool in pan for 10 minutes, then transfer onto a cooling rack to cool completely.
  • Cut and serve.

    My batter was too crumbly, too. The recipe needs to be corrected.Too many cooks had that problem. I can’t serve this to guest as a crumble.
