Instant Pot Pork Chops - juicy chops cooked in the pressure cooker with onion mushrooms gravy. Perfect easy recipe with boneless pork chops.
I serve these with mashed potatoes, topped with the gravy but you can use rice. Add a side of roasted veggies too!
The gravy is a very flavorful bonus! This time, I pressure cooked boneless pork chops and simmered them in mushroom onion gravy, all in my Instant Pot. Best idea ever! These pork chops are tender and flavorful. You will love the rich gravy, perfect to pour all over the chops and mashed potatoes too!
Ingredients:
- boneless pork chops
- salt and pepper
- Italian seasoning
- olive oil
- butter
- garlic
- onion
- mushrooms
- chicken stock
- soy sauce
- apple cider vinegar
- thyme
- water
- cornstarch
Instructions:
- Season pork chops with salt, pepper, and Italian seasoning.
- On saute mode, add olive oil and butter and let melt.
- Add pork chops and sear on each side for 2 to 3 minutes. Remove onto a plate.
- Add more oil to Instant Pot. Add chopped onion and garlic. Sautee, stirring often. Add mushrooms and saute until soft.
- Add ½ cup of chicken stock and deglaze the bottom of the pot. This makes sure the flavor is in the dish and you won't get a burn message.
- Add remaining ingredients. Place pork chops in the liquid. Close the lid, set the valve to the sealing position. Press the manual button and set the timer to 8 minutes.
- When the timer is up, press the "cancel/off" button and let the pressure release naturally, meaning do not switch the valve.
- Remove pork chops onto a plate.
- Press saute setting on your Instant Pot. Mix cornstarch and water in a small bowl. Add to liquid in the pot and cook until thickened. Place pork chops back into the gravy. Let the dish cool for 5 to 10 minutes, then serve.
Cooking time:
If you are searing the chops before pressure cooking, you only need to cook them for 8 to 9 minutes. ALWAYS let the pressure release naturally when cooking meat, for the best results. Otherwise, your meat can be tough and dry.

Instant Pot Pork Chops
Ingredients
- 4 boneless pork chops
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium yellow onion
- 3 teaspoons minced garlic
- 3 baby Bella mushrooms sliced
- 1 cup chicken stock
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon thyme
- ½ cup water
- 2 tablespoons cornstarch
Instructions
- Start by seasoning pork chops with salt, pepper and Italian seasoning, on both sides.
- Set your Instant Pot to saute mode. Wait until the display shows HOT. Add olive oil and butter and let melt. Add pork chops and sear on each side for 2 to 3 minutes. Remove pork chops onto a plate and set aside.
- Add more oil to Instant Pot. Add chopped onion and garlic. Sautee for 3 minutes, stirring often. Add mushrooms and saute until soft.
- Add ½ cup of chicken stock and deglaze the bottom of the pot (scrape any cooked on bits). This makes sure the flavor is in the dish and you won't get a burn message.
- Add remaining stock, soy sauce, apple cider vinegar, thyme, salt and pepper. Place pork chops in the liquid. Close the lid, set the valve to sealing position. Press manual button and set timer to 8 minutes. The Instant Pot will take about 10 minutes to come to pressure.
- When the timer is up, press the "cancel/off" button and let the pressure release naturally, meaning do not switch the valve. When the pin drops, carefully open the lid away from your face.
- Remove pork chops onto a plate. Press saute setting on your Instant Pot. Mix cornstarch and water in small bowl. Add to liquid in the pot. Simmer until thickened. Place pork chops back into gravy. Press "cancel/off" button. Let the dish cool for 5 to 10 minutes, then serve.

This recipe looks delicious. I plan to make it tomorrow. I have bone in pork chops. Do I need to increase the cook time for the bones? Also, if I double the recipe to cook more will I need to increase the cook time?
Sarah says
Hi, how long does it take for the instapot to naturally release? I hit the cancel/off button as indicated and have just been waiting... thanks in advance!
Anna says
Hi Sarah! Mine takes about 12 to 15 minutes to release the pressure. Let me know how it goes!
Melissa Dukovac says
I did 8 boneless chops in my 8qt IP. They were tough and dry...wondering if I should take down the cook time with the extra chops...taking longer coming to pressure and releasing them is overcooking it maybe? Not sure...
Anna says
Hi Melissa! If you have the 8qt IP, you will need more liquid. Also, you have to let the Instant Pot release the pressure naturally. Hope this helps!
Dean says
Ok, so what went wrong? The pork chops were really dry. I had to leave the onions out because no one but me likes them. I also was forced to quick release due to time constraints. Is that the key to this? The sauce never really thickened either. The taste was good but disappointed so dry. Any thoughts? I really wanted to love this.
Anna says
Hi Dean! The quick release is the problem here. You should never release the pressure manually if you are cooking pork chops.

Love this recipe!
Anna says
Thank you, Kitty!
Andrea says
Absolutely amazing chops! Pork chops are usually dry and tough at my house...until I tried this recipe. I also use bone-in chops and cook for 12 minutes with a natural release. Otherwise everything else I do the same. Amazing. The whole family loves these. 🙂
Anna says
Yay! That's wonderful! I am so glad the chops were a hit. Thank you for trying my recipe, Andrea!

I thoroughly enjoyed this recipe!! Had it tonight with rice and veggies. I used bone-in pork chops and it was perfect. Thank you for sharing!!!
Alice Klein says
Did the time specified for boneless work for your bone in chops?
Cheryl Ann says
I have never made pork chops that weren't dry. I had given up, but then I tried this recipe. A new favorite! We made spaetzle to go with it. I did substitute 1T Worcestershire in place of they soy sauce and vinegar.
Anna says
Hi Cheryl! That is absolutely fantastic! Thank you so much for trying my recipe. I am so glad the chops were a hit!
Punkin says
This was really good! The gravy was perfectly salted, so full of flavor!! Delicious! I did however use bone in, center cut chops. I love the flavor added by the bones. If you want to try this, let the chops cook for 8 minutes on high, then natural release for 10 for perfect moist chops! I served this with rice, honey roasted carrots and broccoli.
Thanks a lot for sharing your recipe! Will definitely make this again 🙂

That's fantastic! I am so glad the pork chops were a hit! We love them with rice too!
Virginia says
These were the best pork chops I’ve ever had! I didn’t have mushrooms nor apple cider vinegar, so I used cooking wine in place of the vinegar and Worcestershire sauce in place of the soy sauce. I also used chicken broth that had white wine in it. I thickened the sauce up with the cornstarch, then added a splash of cream. This was the absolute best! Thank you so much for your great recipe.
