This Fruit Salad is made with frozen berries, peaches, pineapple and mango and drizzled with honey lemon dressing! Great way to cool off during the warm months and delicious treat made with frozen summer fruit to enjoy during the rest of the year.
If you ever wonder: "What can I do with a bag of frozen fruit?", I say: frozen fruit salad! I used the two most common frozen fruit mixes and tossed them with lemon juice and honey. While thawing, the fruit juice created the most delicious dressing! This recipe is a time and sanity saver, especially when you have kids or need something to serve your guests.
Frozen Fruit Salad
This salad helps to cool off on a hot summer day. Add chopped fresh mint and maybe even vanilla ice cream for an epic frozen dessert! During the colder months, it's a great way to enjoy the frozen summer fruit. You can even use your own frozen fruit mix!
Ingredients:
- frozen berries mix
- frozen peaches, pineapple and mango
- honey
- lemon or lime juice
How to make Frozen Fruit Salad?
- Start by placing frozen fruit in a large mixing bowl.
- Add lemon juice and honey. Stir well. The honey will get thick and sticky but once the fruit thaws, it will combine with the juice to make a delicious dressing.
- Cover the bowl with saran wrap and let it stand in room temperature for about 1 hour.
- Stir everything together just before serving.
- Garnish with chopped mint leaves, if desired.

Does the fruit get mushy?
If you let the salad sit for about 1 hour, the fruit should be in the perfect stage of quite firm but not frozen. Raspberries thaw the fastest so keep that in mind. Mango remains the firmest of all of the fruit that I used. Peaches and pineapple had the texture of perfectly ripe fruit.
Of course, if you let the salad thaw longer, the fruit will get softer.
What else can I use?
- add citrus zest to kick up the flavor
- add Tajin for a little bit of spice
- add tequila or wine in place of the juice and only serve to adults

How long will this last in the refrigerator without getting mushy?

My Frozen Fruit Salad didn't go to the refrigerator we ate this salad for 12 hours at room temperature and didn't get soggy until about 14 hours. And was slightly less delicious than when made. Even when I was going to throw it out one person begged me to let them take it home. Should last 24 hours after eating in fridge with out getting too soggy.

It will depend on how cold your refrigerator is and how long it will go unrefrigerated during travel time. Depending on the temperature where you live and where your frozen fruit salad is served will make the difference in the texture of the fruit. The flavor will not change and will taste awesome, but, you may have squishy fruit by the end of your dinner or sooner i not kept cold enough. Frozen Fruit at room temperature in the recipe is when the marinade starts blending, this is peak fruit texture not frozen not mushy lasts about 4-8 hours maybe depending on how much it is tossed during servings. Sorry so long winded, just a lot to consider.
