Easy Chicken Skillet with Vegetables - quick and easy dinner idea for busy days. Only 5 ingredients needed to make it under 20 minutes!

Skillet dinners are one of my go-to meal ideas for busy weeknights. They are easy since all of the ingredients cook in one pan and the flavors have a chance to infuse to create a delicious meal the whole family will love. Plus, fewer pots to clean which is always a nice bonus.

This Easy Chicken Skillet with Vegetables is fast and delicious. You only need 5 ingredients to make it and it cooks in under 20 minutes. Winner! You may also like my Garlic and Herb Skillet Chicken and Potatoes. It's so easy and perfect for busy weeknights!

Easy Chicken Skillet with Vegetables Recipe

Ingredients
 
 

  • 1 lb. boneless skinless chicken breasts, cut into chunks
  • ¼ tsp. salt
  • 4 Tbsp. butter divided
  • 3 cups bite-size chunks zucchini and/or yellow squash
  • 1 cup thinly sliced red onion
  • 1 cup halved grape tomatoes
  • ¼ cup chopped parsley or basil leaves (optional)

Instructions
 

  • In a large skillet, melt one tablespoon of butter. Add chicken and season with salt. Cook stirring often until cooked through, about 5 minutes. Remove onto a plate and set aside.
  • Add another tablespoon of the spread to skillet. Add onion and zucchini. Saute stirring often, until tender.
  • Add tomatoes and cooked chicken back to skillet. Add remaining 2 tablespoons of the Country Crock spread to skillet. Cook until heated through.
  • Serve garnished with chopped parsley or basil.

    Skillet meals are definitely a go-to around here on weeknights also! I love all the great veggies you added to the dish. And the scan and go app at Sam's Club sounds like such a great idea. So much easier that wrangling little ones at the checkout

    So, first -- that scan and go app at Sam's Club sounds phenomenal! I WANT THAT! Second, I want this skillet dinner... So simple and quick to prepare -- and I have all the ingredients... even have the Country Crock in the fridge -- I'm ready!

    This skillet looks delicious. I love how easy, flavourful, fast, and colourful it is! So great for those busy nights.

    And oh man, I love that app idea!! There's not Sam's club in my area so I shop at Costco but I think those are similar concepts. I wish Costco had an app like that. It's just amazing!

    I'm totally intrigued by the "scan and go" thing at Walmart and Sam's now- I haven't tried it yet! (I'm not sure ours are doing it yet)... but I'll give it a shot when we get it! This dinner looks delicious and easy- I bet shopping for it was even faster now!

    One skillet meals are so great for busy weeknights, or even on the weekend when you don't want to spend a lot of time in the kitchen. This looks like a crowd pleaser. Leftovers would be great too. Might as well make lots to enjoy again down the road (or even tuck away in the freezer).
