CHOCOLATE PEANUT BUTTER CHIA PUDDING
I give you my favorite weekday breakfast of choice: chia pudding with peanut butter and chocolate. Healthy, filling and so so delicious! I am obsessed! I was hesitant to try making chia pudding at first but my curiosity got the best of me and I am so glad it did. Don't get me wrong. I still love my overnight oats but this! This is what healthy should taste like. Healthy food should make you feel good, not miserable. This chia pudding will make you a chia seeds fan for sure! Chia seeds are high in fiber, have 2 grams of protein per tablespoon, are full or antioxidants, rich in calcium. They are a superfood!
Chocolate Chia Pudding Ingredients:
- chia seeds
- unsweetened cocoa powder
- peanut butter
- almond extract
- brown sugar
How to make Chocolate Chia Pudding?
- This pudding is so versatile. The only rule is to use 2 tablespoons of chia seeds and ½ cup of milk.
- Stir with your choice of add-ons, cover and refrigerate overnight

Recipe substitutions:
You can use any milk you use with your cereal,
any nut butter you enjoy
and vanilla extract in place of almond. I really enjoy almond extract with chocolate though!
In place of brown sugar, you can use real maple syrup or honey.
The toppings can be anything you would add to your oatmeal or yogurt. I actually love vanilla Greek yogurt, chopped dark chocolate, sliced bananas and chopped nuts.

Chocolate Peanut Butter Chia Pudding
Ingredients
- 2 tablespoon chia seeds
- ½ cup milk any kind
- 1.5 tablespoon brown sugar
- ½ teaspoon vanilla extract or almond extract
- 2 tablespoon smooth peanut butter
- 1.5 tablespoon unsweetened cocoa powder
Instructions
- Mix all ingredients in a jar. Cover and refrigerate overnight. Stir and enjoy.
