Expert tips:
- spices: if you don't have individual spices, use a pumpkin pie spice mix. It's perfect for this dish! In a pinch, just ground cinnamon will do.
- potatoes: if at all possible, try to use potatoes that are roughly the same size for even baking.
- toppings: add marshmallows or oat crumble if desired.
Can I make this dish ahead of time?
You can easily prep the dish by cutting the potatoes and tossing them with the sauce. Cover the dish with plastic wrap and store in the fridge until ready to bake. Make sure to coat the potatoes well or they will dry out. Let the dish sit on the counter to come to room temperature before baking in the oven.
Storing leftovers:
Any leftovers should be stored in a container with lid in the fridge for up to 4 days. Reheat easily in a microwave.
