Chocolate Trifle For Two - chocolate cake drizzled with rum, topped with chocolate mousse and whipped cream. One amazing dessert.
So I went completely crazy. Nuts, I am telling ya!
Remember this mousse? I took it to a whole new level.
I made my chocolate cupcakes for two (baked in ramekins), crumbled them and drizzled them with rum. Are your knees weak yet? Then check this: I topped it with chocolate mousse and whipped cream.
Bam.
This recipe is an absolute and total winner. It makes exactly two cupcakes or mini cakes that you can bake in a cupcake pan or two ramekins. The chocolate mousse makes exactly two servings too. No need to make big batches, which also means no leftovers. Added bonus - it all can be made two days in advance. Perfect dessert for a special occasion like an anniversary or Valentine's Day or simply a date night. It's portion control with decadence.
If this dessert is not going to get you some extra kisses from your special someone - then I don't know what can.
Chocolate Trifle For Two Recipe
Ingredients
- 5 tablespoon all-purpose flour
- 3 tablespoon granulated sugar
- 3 teaspoon unsweetened cocoa powder
- ⅛ teaspoon baking soda
- ¼ teaspoon baking powder
- 1/16 teaspoon salt a dash
- 3 tablespoon cold water
- 2 tablespoon canola oil
- ¼ teaspoon vanilla extract
- ¼ teaspoon white vinegar
- 1 tablespoon unsweetened cocoa powder I used Hershey's
- 2.5 tablespoon hot water
- 3,5 oz semi-sweet chocolate I used Hershey's Special Dark
- ¾ c cold heavy whipping cream
- 2.5 teaspoon granulated sugar
- dash of salt
- ½ c cold heavy whipping cream
- 2 teaspoon granulated sugar
- dash of salt
- 2 teaspoon rum
- chocolate shavings
Instructions
- Line two cavities of your cupcake pan with liners or grease two 4oz. ramekins. Set aside.
- Preheat oven to 325 degrees F.
- In a medium mixing bowl, whisk together the dry ingredients ( flour, sugar, cocoa powder, soda, baking powder and salt ). Set aside.
- In a small measuring cup, stir together water, oil, vanilla and vinegar. Add to dry ingredients and stir.
- Divide into two liners. Bake 18 to 20 minutes, or until toothpick inserted in the center of each cupcake comes out clean. Cool completely.
- In a small bowl, mix together cocoa powder and hot water. Set aside to cool slightly.
- In a double boiler, melt chocolate. Cool 3 to 5 minutes.
- In a large mixing bowl of a stand mixer, whip cream, sugar and salt at medium speed. Whip for 30 seconds. It should slightly thicken. Increase the speed to high and whip the cream until soft peaks form. It should happen quite fast ( 20 to 30 seconds ) so do not walk away. Set aside.
- Whisk cocoa powder mixture with melted chocolate until smooth. At first it will look like your chocolate seized but keep whisking. It will come back together and be smooth.
- With whisk, fold in ⅓ of the whipped cream into chocolate mixture to lighten it. Switch to a rubber spatula and gently fold in the rest of the whipped cream, until no streaks remain. It is important or the mousse won't set right.
- Place cream in a medium mixing bowl. Add sugar and salt and whip for 30 seconds. It will slightly thicken. Increase the speed to high and whip until stiff peaks form, about 3 to 4 minutes. Set aside.
- Crumble the cooled cupcakes. Spoon the crumbs into the bottom of your serving glasses.
- Drizzle with rum, one teaspoon per glass.
- Spoon the mousse, dividing equally among the glasses.
- Top with whipped cream and smooth out with the back of a spoon.
- Clean any smudges on the glasses.
- Garnish with chocolate shavings.
- Chill until ready to serve or up to 2 days.
