Spiralized Cucumber Ranch Salad – refreshing side dish with cucumber and creamy ranch dressing. Quick and delicious!
Have you joined the spiralizing craze yet? How about a quick and delicious salad with spiralized fresh cucumber and creamy ranch dressing to convince you to join! It’s refreshing and so simple and fun to make. We enjoyed it with spicy grilled chicken last weekend and with spicy pork tacos last week. It’s crazy good!
If you are a fan of ranch dressing like me, you most likely have a lot of it in your cupboard and love to add it to everything. It happens to be my secret ingredient in this Spinach Dip Chicken Pasta and other dinner recipes that I can’t wait to share with you!
See that little green tool on the photo above? It’s OXO Hand-held Spiralizer and I had a chance to try it. It’s very simple to use and makes spiralizing cucumbers or zucchini a breeze. I even tried it with peaches and apples. In my opinion, it works great with soft veggies and fruit but with apples and carrots I was getting quite the workout. Still the veggie noodles came out great and my kids love the fun spin on salads!
This easy salad happened on a day I need a quick side dish to go with a spicy meat and cucumber sounded like the perfect choice. I usually enjoy cucumber sliced with a sprinkle of sea salt (on a sandwich or just plain).
- 1 large cucumber
- 1/3 cup Greek yogurt or sour cream
- 1 teaspoon minced garlic
- 1.5 teaspoons dry Ranch dressing mix
- 1/8 teaspoon black pepper
- 1/4 teaspoon salt to taste
- Spiralize cucumber. Place in a medium bowl.
- In a small bowl, whisk together yogurt/sour cream, garlic, Ranch mix, pepper and salt. Mix well together. Pour over cucumber spirals.
- Toss gently to coat.
- Cover and chill until ready to serve.
- Refrigerate leftovers for up to 2 days.
