- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 4 garlic cloves minced
- 8 oz tomato sauce
- ½ cup cream of half and half
- 2 teaspoons cornstarch if using half and half
- ½ cup Parmesan cheese

- Slice chicken leghtwise to make 4 thinner cutlets.
- Season chicken with salt, pepper and Italian seasoning, evenly on both sides.
- To a large skillet, add 1 tablespoon of oil and 1 tablespoon of butter.
