Coconut Cream Mini Frozen Desserts with White Chocolate Magic Shell

Hot summer days are upon us so it’s time to give our ovens a little break. Frozen and no-bake desserts will be in the spot light for a while. But who complains? Just look at these beauties!

And when it comes to frozen desserts, only creamy will do. Creamy, sweet and perfectly chilled.

I mentioned a few posts ago, that I received the Norpro Mini Cheesecake Pan from BigKitchen. I told you also that you can make more than just cheesecakes in this pan. You can make a super easy frozen dessert that looks quite and helps keep things in moderation.

These mini frozen desserts pop right out from the pan and can be served right away or stored in the freezer until ready to serve.

I made these frozen babies with just few easy ingredients: pudding mix, milk, whipped topping (like COOL Whip), coconut, chopped white chocolate and rum extract. You can swap the coconut and white chocolate for dark chocolate and graham cracker crumbs or other add-ons like frozen fruit.

For the crust you can use the traditional graham cracker crumbs and butter but I didn’t have these on hand. Instead I used rolled oats, slivered almonds and coconut. Then added melted coconut oil and combined it all into a perfectly delicious crust. Yum!

And because it’s a frozen dessert, I thought that homemade magic shell would be the perfect topping. Magic shell that is made with two ingredients: chocolate and coconut oil. I added coconut to complement the mini cakes.

Coconut Cream Mini Frozen Desserts with White Chocolate Magic Shell

Prep Time: 15 minutes

Total Time: 2 hours, 15 minutes

Yield: 15 mini cakes

Coconut Cream Mini Frozen Desserts are the perfect treat for hot summer days. You need only few easy ingredients to make these beauties! Topping with white chocolate magic shell is optional but highly recommended.

Ingredients

    for the crust:
  1. 1/2 c slivered almonds
  2. 1/2 c rolled oats
  3. 1/2 c shredded coconut
  4. 1/4 c coconut oil, melted
  5. for the filling:
  6. 1 pkg instant vanilla pudding mix
  7. 2 c cold milk
  8. 4oz. whipped topping, thawed
  9. 1/4 c shredded coconut
  10. 1/3 c white chocolate, chopped
  11. 2 drops rum extract
  12. for the white chocolate magic shell:
  13. 3/4 c white chocolate chips or chunks
  14. 1/4 c coconut oil, melted
  15. 1/4 c shredded coconut

Instructions

    For the crust:
  1. Combine all ingredients (except the coconut oil) in a food processor and process until it resembles crumbs.
  2. Add coconut oil and stir in until all is evenly moistened.
  3. Drop tablespoons of crust mix into mini cakes cups and press down.
  4. Set the pan aside.
  5. To make the filling:
  6. In a large mixing bowl, whisk together cold milk and pudding mix. Whisk until thickened. Add chopped white chocolate and coconut and stir it in.
  7. Add rum extract and stir in.
  8. Gently fold in the whipped topping. Stir just until there is no white streaks from the topping.
  9. Fill the mini cake cups all the way to the top.
  10. Place pan in the freezer and freeze until set, about 2 hours.
  11. to make the white chocolate magic shell:
  12. Place white chocolate in double boiler and melt. Stir until smooth.
  13. Add coconut oil and stir well.
  14. Cool to room temperature before using.
  15. before serving:
  16. Let the pan sit on the kitchen counter for 15 minutes before removing the cakes. Gently pop the cakes out.
  17. Pour a tablespoon of white chocolate magic shell over the cakes. Let harden.
  18. Serve immediately or store in the freezer for up to 3 days.

    Hi Donna! Thank you so much for your question. You can easily use whipping cream. I suggest starting with a 1/2 c of unwhipped cream as it will double in size. The whip it and gently fold it in. I have never whipped coconut milk so I can’t say how much you would need… Let me know how it goes! Have fun!
