Hot summer days are upon us so it’s time to give our ovens a little break. Frozen and no-bake desserts will be in the spot light for a while. But who complains? Just look at these beauties!
And when it comes to frozen desserts, only creamy will do. Creamy, sweet and perfectly chilled.
I mentioned a few posts ago, that I received the Norpro Mini Cheesecake Pan from BigKitchen. I told you also that you can make more than just cheesecakes in this pan. You can make a super easy frozen dessert that looks quite and helps keep things in moderation.
These mini frozen desserts pop right out from the pan and can be served right away or stored in the freezer until ready to serve.
I made these frozen babies with just few easy ingredients: pudding mix, milk, whipped topping (like COOL Whip), coconut, chopped white chocolate and rum extract. You can swap the coconut and white chocolate for dark chocolate and graham cracker crumbs or other add-ons like frozen fruit.
For the crust you can use the traditional graham cracker crumbs and butter but I didn’t have these on hand. Instead I used rolled oats, slivered almonds and coconut. Then added melted coconut oil and combined it all into a perfectly delicious crust. Yum!
And because it’s a frozen dessert, I thought that homemade magic shell would be the perfect topping. Magic shell that is made with two ingredients: chocolate and coconut oil. I added coconut to complement the mini cakes.
It’s super fun to dig into these and break the shell! My kiddos love to eat the shell first and then the cakes.
