These Corn Fritters are made with fresh corn, cornmeal, cheddar, green bell pepper and fried until golden. This easy appetizer is the best way to enjoy corn this season!

Why This Recipe Works
For us Kansans, corn is a very common ingredient in the kitchen. One of my favorite ways to enjoy fresh corn right off the cob is to turn it into these fritters. They are quick to whip up and absolutely delicious!
I played with the basic recipe for a fritter and added ingredients that in my opinion make them the best. These fried cakes are a huge hit with my family and always disappear fast!
Sweet corn is a staple around here. If I don't make these corn cakes, I use it to make my Fresh Corn Salad or Sweet Corn Casserole. They are all easy and delicious!
Ingredients:
- corn: for the best texture and flavor use fresh corn off the cobs;
- yellow cornmeal: adds texture to fritters;
- all-purpose flour: needed for the fritter base;
- baking powder: necessary leavener that makes the fritters fluffy;
- cheddar cheese: the sharper, the better the flavor
- onion and garlic: for more flavor; use sweet onion if possible and mince it;
- green bell pepper: optional but highly recommended; you can also use jalapenos for a spicy kick;
- egg: to bind the ingredients;
- half and half: if the mixture seems too dry after mixing all ingredients, add a tablespoon or more of the half and half; you can also use whole milk.
How to make Corn Fritters?
- Start by whisking dry ingredients together (cornmeal, flour, baking powder, salt, and pepper).
- Add corn and toss with dry ingredients.
- Add onion, garlic, and pepper. Mix in.
- Whisk wet ingredients together (half and half, egg).

- Heat up oil in a pan, over medium heat.
- Pour ¼ cup of corn mixture into a pan and fry for 2 to 3 minutes per side or until golden brown.
How to cut corn off the cob?
Start by removing the leaves and silk. Using a paper towel or running it under water helps. Next, stand the cob on a cutting board with the top pointing down and cut off the corn kernels by running the knife down, along the cob. You can also use tools like corn stripper. Use the corn in the recipe right away or place it in a freezer-safe bag and freeze for up to 6 months.

Yes, these fritters can be made ahead of time and reheated as needed in the microwave, air fryer or oven. Store them in a container, in the fridge for up to 3 days. Note that for the best texture, they should be served right after frying.
You can also use frozen corn but it needs to be thawed and patted dry (as best as possible). If you want to use canned corn, go for whole kernel corn, drain it, rinse, and pat dry.

- 1 large egg

- Serve with Ranch dip or sour cream.

Yes I made this recipe a few hours ago. Used canned milk instead of half and half,hatch pickled sliced jalepenos, onion powder, parsley flakes and the rest is pretty much in your recipe. I fried and ate one with sour cream.
