    These Cinnamon Sugar Mini Donut Muffins are fluffy and look like muffins but taste like your favorite cinnamon donuts. They are baked, rolled in butter and cinnamon sugar for a fun little treat!

    These little treats are so simple to make, just like my Mini Pancake Muffins and Pull-Apart Rolls.

     These donut muffins are super delicious. Dunking them in melted butter and then rolling in cinnamon sugar is not only fun (kids love it) but also keeps them utterly soft and (forgive the word...) moist. They literally melt in your mouth! And they take 10 minutes to make and 15 minutes to bake so you are about half an hour away from popping these sugary sweet treats into your mouth!

    They are so fun to make and all you need is a bowl and a whisk (or a spatula). These have no egg yet they have milk so they are not vegan but it's still great to have a recipe that doesn't require eggs. Tell me you too have days when baking bug strikes and you find yourself without eggs? Way too often for me. It got to the point where my Hubby is looking for chickens we could raise in the backyard. 🙂

    Ingredients:

    • granulated sugar
    • unsalted butter
    • ground cloves
    • vanilla extract
    • milk
    • baking powder
    • all-purpose flour
    • ground cinnamon

    Instructions:

    • Preheat your oven and grease mini muffin tin (cavities and the top). Set aside.

    • In a medium bowl, whisk together flour and baking powder. Set aside.

    • In a large mixing bowl, whisk together melted butter and sugar. Add spices and vanilla, whisk well. Add milk and whisk again. Add dry ingredients and whisk until smooth.

    • Fill the muffin pan. Bake in preheated oven until a toothpick inserted in the center of each muffin comes out clean. Cool in pan for 2 minutes, transfer onto a wire rack.

    • Prepare the coating: melt butter in a small bowl; in another small bowl, mix sugar and cinnamon. When muffins are completely cool, dunk each one in melted butter and then roll in cinnamon sugar. Return onto a wire rack and let cool for few minutes.

    Ingredients
     
     

    • 1/2 cup granulated sugar
    • 1/4 cup unsalted butter melted
    • 1/4 tsp ground nutmeg or cloves
    • 1/2 tsp pure vanilla extract
    • 1/2 cup milk
    • 1/2 tsp baking powder
    • 1 cup all-purpose flour
    • 1/4 cup unsalted butter melted
    • 1/2 cup granulated sugar for rolling
    • 1 tsp ground cinnamon

    Instructions
     

    • Preheat your oven to 375 degrees F. Grease mini muffin tin (cavities and the top). Set aside.
    • In a medium bowl, whisk together flour and baking powder. Set aside.
    • In a large mixing bowl, whisk together melted butter and sugar. Add spices and vanilla, whisk well. Add milk and whisk again. Add dry ingredients and whisk until smooth. 
    • Fill the muffin pan. Bake in preheated oven for 15 to 17 minutes, or until toothpick inserted in the center of each muffin comes out clean. Cool in pan for 2 minutes, transfer onto a wire rack. 
    • Prepare the coating: melt butter in a small bowl; in another small bowl, mix sugar and cinnamon. When muffins are completely cool, dunk each one in melted butter and then roll in cinnamon sugar. Return onto wire rack and let cool for few minutes.

      So quick and easy!!! I used self rising flour instead, so I didn’t add any baking powder or salt and they turned out perfect! Just reduced the cooking time to about 12 minutes and cooked them at 200 degrees Celsius. Love to see it and hope to see more recipes like this !

      These reminded me of the French breakfast puffsI make. Same idea but I use nutmeg in them and usually only do the tops in cinnamon and sugar. Good.

      These are so yummy and turn out great I've made them twice with my daughters for our poetry tea time! We used King Arthur gluten free flour and once we used forager coconut cashew milk and they were still great!

        Hi Veronica! Baked goods are always better fresh. I would recommend making them the day ahead. You can freeze them too, but I would not dip them in butter and cinnamon sugar. Do it before serving.

      I make a half-batch of these without the coating for my partner and I to snack on a couple of times a week. I use gluten free flour and vegetable oil spread instead of butter and they turn out delicious every time! Thank you 🙂

        Made these right after I found this recipe. Didn't have mini muffin pans, used standard size. Baked for an additional 8 min. and they were baked perfectly. These made my family very happy. Thanks for the great recipe.

      Just made these and they are easy to make and taste good. I made some directly in the muffin pan and some
      In paper bun cases cos wasn't sure if they would stick to the pan. Well they didnt But still prefer to use the cases cos the ones without browned a bit too much and and had a harder crust whereas the ones baked in the cases were evenly browned and softer texture which is how I prefer them. I too Suggest using the sugar and cinnamon mixture in small batches as it does get a bit clumpy.

      These are truly better than any cinnamon sugar doughnut I have had! They are easy and delicious! I used vanilla bean paste and used both the nutmeg and clove to meet the measured amount. Thank you for sharing!! The only problem was I probably ate more of these than a regular sized doughnut thinking they were just mini. ?

      I've made these a few times. They are delish! A few tips:
      -I used nutmeg but plan to try cloves next time.
      -After step 5, use a spoon or scraper after using a whisk in the first few steps. The batter starts to get clumpy and sticky!
      -Check your muffins halfway through baking. Mine were way overdone after 15 mins. After trying again, they were good after 10 mins. In fact, I will probably check them at 8 or 9 mins next time.
      -When your muffins have cooled after baking, start by only using a little of your cinnamon sugar mix. It starts to get clumpy after dunking in butter, so reserve it in order to switch out for fresh sugar.
