Glazed Lemon Muffins - fluffy muffins with fresh notes of citrus! Soft and fluffy muffins with lemon zest and sweet glaze are perfect for a snack or a quick breakfast!
GLAZED LEMON MUFFINS
Perfect muffins with a fresh citrus note definitely make me happy. Especially if I can have one in the morning with my coffee. These muffins are so fluffy that you could almost call them cakes, but the top is slightly crunchy and perfect for a glaze. There is nothing easier than whisking the dry ingredients together, whisking the wet ingredients together and then combining it all with a few stirs of a spoon.
These muffins are like little sun rays. They are fresh, bright and energizing. I hope they will make you happy too! You may also like my Lemon Raspberry Muffins or the popular Bakery-Style Blueberry Muffins!

Could you use orange instead of lemon in this? I have some extra oranges. My daughter made this recipe and loved it! She's making it again tomorrow. 😉
Anna says
Hi Diana! Absolutely yes! It will be delicious with orange too. 😀 I am so glad your daughter loves this recipe. Thank you so much!

Hi! Is there a way to make these ahead? I'm planning to serve these the next day. Thanks!
Anna says
Hi Chris! They will be just fine if you make them a day ahead. To prevent drying out, cover the muffins with plastic wrap or keep them under a lid. I hope this helps!
Sue Reuschlien says
Can the glazed muffins be frozen?
Anna says
Absolutely! I suggest freezing them without the glaze. I hope this helps!

These look so delicious, Anna! I'm pinning these…I'm really in the mood for some citrus flavor these days. 🙂
Nancy says
Oooooh, these are so pretty, bright and vibrant, Anna! They make me happier just by looking at these photos! The inside of the muffin looks perfectly fluffy and light. Love it. As for the attitude, I'm totally guilty of being a Negative Nancy. Every now and then, I remind myself of all the blessings I have. A gratitude journal is a great idea. I started one over a decade ago after Oprah talked about it on her talk show. I didn't maintain it for long but i remember it did help me feel better.

These look so light and fluffy, I can't wait to try them! They will definitely help make it feel like spring is finally here 🙂
It's also always great to appreciate the small things in life- great idea on making it a point to do so!

Girl, I'm with you on the complaining thing. I shared recently a tough week on the blog but refrained from explaining it all in a recipe post. My idea was to share the trouble so long as I had a solution to offer others should it ever happen to them. So, a separate post it shall be. But, with things we cannot control (like the crazy weather, ha!) there's not much to offer in a blog post for a solution is there? Perhaps something inspiring. 🙂 For those other things, I love the journal idea. These sunny lemon muffins would certainly make any day brighter though! Pinning to my lemon board tonight and will share on group boards. Have a great rest of the week! xo
