Few days ago, I went grocery shopping for ingredients for one of the posts I am working on. I had a great idea for a dish and all of the ingredients on the list. I was excited about the plan and anxious to make it because it is one delicious idea!

Little did I know that my store would be totally out of two main ingredients for this dish. Oh, the frustration!

As you know I shop with all of my kids in tow, so as soon as I realized that I have to change my plan and do it asap because my toddler is 5 seconds away from a meltdown as apparently I am not walking towards the yogurt section fast enough - I realized that's how it must be to be on Chopped!

If you watch the show, you know that it's a crazy 10 seconds that the contestants have to come up with a dish. That was me, in the middle of the store. I had 10 seconds to come up with a new idea or leave the store and come back another time.

Thanks goodness for my patient husband! He took the kids to get the yogurt and I was able to think for few minutes and get the ingredients I needed. The second dish is still great but I am not giving up on the first idea. It will happen!

My life is full of crazy situations like this. As a mother of three, I have to constantly be ready to change plans if things don't go as planned. I also need a lot of energy to deal with it all. Hence the today's recipe.

Mint Chocolate Energy Bites.

No-Bake Chocolate Mint Energy Bites

These energy bites are so easy and so good that I can't stop making them. I have a batch in the fridge right now!

Also, I happen to love chocolate and mint together so it was only natural that these happened. These energy bites have the same goodies that the peanut butter version but are packed with chocolate and refreshing mint flavor! Energizing and refreshing - win win! A chocolate treat with no guilt. Who's in? 🙂

Ingredients
 
 

  • 1.5 cups old-fashioned oats
  • ½ cup unsweetened coconut
  • ¼ cup ground flaxseed
  • ¼ cup unsweetened cocoa powder
  • ¼ cup mini chocolate chips
  • ½ cup smooth peanut butter
  • ⅓ cup honey
  • ¼ teaspoon peppermint extract

Instructions
 

  • Place all ingredients in a large mixing bowl. Stir to combine.
  • Scoop the mixture with a small cookie scoop.
  • Place on a parchment paper baking sheet.
  • Chill in the fridge until set, about 1 hour.
  • Store in a closed container in the fridge.
