Why This Recipe Works
If you ever wondered what you can do with the carcass leftover from your Thanksgiving turkey, the answer is stock made in the Instant Pot. Flavored with vegetables and herbs as well as roasted turkey, this stock is a no-fuss way to get the most out of the holiday dinner leftovers.

- 1 roasted turkey carcass
- vegetables: carrots, celery, garlic, onion
- seasoning: whole peppercorns, sea salt
- herbs: thyme, Bay leaves, sage leaves
- water: to make the stock.

How to make turkey stock in the Instant Pot?
- Check if the insert is in your Instant Pot.
- Place the turkey carcass in your IP. You may have to break it to make it fit.
- Add veggies, herbs, seasoning, and water.
- Close the lid, and set the valve to sealing.
- Press the "manual" button and adjust the timer to 35 minutes. The Instant Pot will beep and start building up pressure.
- Once the cooking cycle is done, press "cancel/off" and wait 5 minutes. Then release pressure by switching the valve to venting.
- Carefully open the lid away from your face.
- Remove the carcass and discard it.
- Strain the stock through a fine-mesh strainer and discard veggies and herbs.
- Cool the stock completely. Scoop out any grease that may be floating at the top.
- Pour the stock into containers. Store in the fridge for up to 1 week or freeze for up to 3 months.
How to use turkey stock?
- Use it in any recipe that calls for chicken stock.
- Make soup (especially if you have leftover turkey meat).
- Use it to make gravy, like my turkey gravy recipe.

Place cooled stock in freezer-safe containers and freeze for up to 3 months. Thaw it out in the fridge and use in a recipe.
I store part of the stock in glass jars with lids, in my fridge and use it up within a week.

Instant Pot Turkey Stock
Ingredients
- 1 roasted turkey carcass
- 3 carrots
- 3 celery stalks with leaves
- 6 garlic cloves
- 1 medium yellow onion
- 1 teaspoon whole peppercorns
- 2 teaspoons sea salt
- 2 sprigs thyme
- 2 Bay leaves
- 4 sage leaves
- 6 cups water
Instructions
- Check if the insert is in your Instant Pot.
- Place turkey carcass in your IP. You may have to break it to make it fit.
- Add veggies, herbs, seasoning and water.
- Close the lid and set the valve to sealing position. Newer models do it on their own.
- Press “manual” button and adjust the timer to 35 minutes. Make sure the IP is set to cook on high pressure. The Instant Pot will beep and start building up pressure. This can take about 12 minutes.
- Once the cooking cycle is done, press “cancel/off” and wait 5 minutes. Then release pressure by switching the valve to venting.
- Carefully open the lid away from your face.
- Remove the carcass and discard it.
- Set a fine-mesh strainer over a large bowl. Strain the stock and discard veggies and herbs.
- Cool the stock completely. Scoop out any grease that may be floating at the top.
- Pour the stock into containers. Store in the fridge for up to 1 week or freeze for up to 3 months.

If it is, do I take it out?
If it’s not, do I put it in??
Someone is assuming the reader has a lot of IP experience.

Hi Carol! I am sorry if the wording seems confusing. From past conversations with Instant Pot users, I know sometimes the insert is forgotten in the dishwasher or a cupboard and not in the IP, and before you know it, you pour liquid and it goes over the heating element. It's just to remind users to make sure it's inside. I try to include as much information as possible, especially for beginner users. I hope this explains it. Let me know if you have any questions!

Add 2 Tbsp apple cider vinegar to the water before starting the IP. It will help pull the nutrients out of the bones.
