    Fajita Stir Fry with Lime Quinoa

    During summer, my family is all about simple meals with fresh ingredients. Meals that don't take much time to prepare, are loaded with veggies and ones that are healthy and fill you up with energy to enjoy the outdoors!

    Recently, I was asked by Circulon to create a dish with Mexican flavors using their 12" wok with cover. It was a perfect assignment for me since we love Mexican food! And after the recent success of adding quinoa to enchiladas, one of our favorite dinners, I decided to go similar route. This time I flavored the quinoa with lime and I don't think I will ever make the plain one again!

    I can't even begin to tell you how much we loved this dish! The lime quinoa is absolutely fantastic! So fresh and so good for you! The fajita chicken comes together in a flash even though you make the seasoning from scratch. The red peppers and onion cook in just minutes and add sweetness to the dish. It's a perfect summer meal!

     

    Fajita Stir Fry with Lime Quinoa

    Since this wok arrived at our house, it has not gotten a break. I have been using it almost every day. We love stir fry during summer! It's such an easy and versatile meal that allows you to use any veggies and meat you have on hand. It's surprisingly very light and very easy to clean. The wok's nonstick surface makes it possible to cook with minimum to none use of oils. It's called TOTAL® Food Release System - the surface of the wok is created with raised circles that prevent the surface abrasion and release food easily. Another cool thing - the lid is shatter-proof!

      I can't wait to try this! Quinoa is one of my favorites, and using it in place of tortillas is genuis! I had an electric wok that I used frequently, but I lost the cord to it in a move, so this wok would be great to make stir frys including general tsos! Thanks for this great recipe and giveaway!
