Citrus and Berries Cake - quick and easy cake with a fabulous combination of citrus and berries!
This cake is my attempt to bring the Spring. Everywhere I look, people are demanding the end of this awful winter. Enough is enough.
I've heard the birds chirping the other day and thought: Alright, Spring has to be just around the corner. And then our weather guy said something about snow and a snowstorm this weekend and I just wanted to throw my mixing bowl at him. I mean at the TV. Or the winter. Ugh.

This cake is sort of a transition from winter to spring. I used cranberries (yes, I have bags of them in my freezer) and blood oranges. Both a winter fruit but the citrus flavor from the zest and the fact that you can use any berries in this cake makes it great both for winter and for spring.
The base is one of my favorite quick vanilla cakes. It will rise nicely so you want to let it bake a little bit until it sets before you add the citrus slices. Otherwise, they will sink in and the batter around them won't bake properly.
