Blondies Cookies

My Hubby says I have a thing for blondies.

After making my blondies bars, it was just a matter of time for me to come up with cookies.

Enjoy the blondies flavors and texture in a form of a cookie....chewy on the inside, slightly crispy edges.. deliciously butterscotch flavor....

Yeah, I have a thing for blondies...

 Blondies Cookies

1 c brown sugar, packed tightly
¼ c butter, melted, cooled
1 egg, beaten
1 teaspoon vanilla extract
1 c + 3 tablespoon all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt

In a medium mixing bowl, whisk together the dry ingredients ( flour, baking powder, salt ).
In a large mixing bowl, stir in butter and sugar together until smooth.
Add the egg and vanilla. Stir again.
Slowly add the dry mix. Stir until all is combined. It should be thick enough to scoop out with a spoon or a cookie scoop. You can chill the dough until firm.
Bake in 350 degree oven for 10-13 minutes, until golden brown. Cool for 2 minutes on the sheet and than transfer to a wire cooling rack.

    These do look like the perfect thing to put in hubbys lunchbox! Your description does make them a winner, however the picture here did have some influence also-yum!
