Creamy Mushroom Garlic Chicken - juicy chicken in a creamy sauce served with mashed potatoes, rice or pasta for a quick and delicious dinner!
This chicken is so easy to make and it is perfect for busy weeknights or weekends, special occasions, etc. Serve with mashed potatoes, rice, roasted Brussels sprouts or roasted broccoli.

This skillet chicken is one of my favorite ones to make when I want to take a break from pasta and rice casseroles. When I want something more elegant on the plate. But it still has to be quick and easy. I absolutely love the garlicky mushroom sauce on chicken or pork chops. A simple garnish of chopped parsley and you are done and ready to eat. This looks like a weekend dish but since it really doesn't take much time to make, it's great for busy weeknights too.
Ingredients:
- 2 chicken breasts
- salt and pepper
- all-purpose flour
- olive oil
- butter
- mushrooms
- garlic
- chicken stock
- heavy cream (evaporated milk is fine too)
How to make it
- Simply slice the chicken breast in half lengthwise, season each piece and dredge in flour.
- Heat up oil in a skillet. Cook chicken on both sides until nicely browned. Remove onto a plate.
- Make the creamy mushroom sauce in the same pan by adding more oil, garlic and mushrooms and saute until soft and fragrant. , add the chicken back in.
- Garnish with chopped parsley and serve. Since the chicken breast pieces are thin, they don't take much time to cook.

Expert tips
- Make sure to scrape every cooked on bits from the bottom of the pan, while adding the stock. That's where the flavor is.
- For a lighter sauce, you can use half and half or a mixture of milk and cornstarch so it will still thicken to a sauce consistency. For that, use 1 and ½ teaspoon of cornstarch and ½ cup of milk.
- Make sure to slice the chicken breasts evenly, so they will cook properly.

Ingredients
- 2 boneless skinless chicken breasts
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup flour
- 1 tablespoon olive oil
- 2 tablespoons butter , divided
- 1 ½ cups sliced white mushrooms
- 1 and ½ teaspoon minced garlic
- ½ cup chicken stock
- ⅓ cup heavy cream
- chopped parsley
Instructions
- Cut each chicken breast in half lengthwise. Season each piece with salt and pepper.2 boneless skinless chicken breasts, ½ teaspoon salt, ¼ teaspoon black pepper
- Add flour to a shallow dish. Dredge each chicken piece in flour.¼ cup flour
- In a large skillet, heat up olive oil and butter over medium heat. When butter is melted, add floured chicken pieces to pan. Cook until golden brown, about 4 to 5 minutes per side. The internal temperature should register 165℉. Remove chicken from pan and place on a plate. Set aside.1 tablespoon olive oil, 2 tablespoons butter
- Add more oil to the pan if needed. Add garlic to pan and saute until fragrant. Add mushrooms and cook until soft.1 and ½ teaspoon minced garlic, 1 ½ cups sliced white mushrooms
- Add chicken stock and bring to boil. Scrape the bottom of the pan with a wooden spoon so all of the browned bits from cooking chicken are mixed into the sauce.½ cup chicken stock
- Remove skillet from heat, add cream and stir well. Return chicken to skillet. Place back on heat for 1 to 2 minutes or until the whole dish is hot.⅓ cup heavy cream
- Serve chicken with mashed potatoes or cooked pasta. Spoon mushroom sauce over each pieces. Garnish with chopped parsley and more black pepper.chopped parsley
