 It’s time for our second Blue Ribbon Challenge!!

I sure did! I have to admit, it was my first time making semifreddo. Why, oh why, haven’t I made this dessert before? No idea. It’s no-bake, so versatile and a real treat in this hot weather. I went with my current theme, Black Forest, which is basically a cherry and chocolate combo. Can’t go wrong here, if you ask me. I made my base as you would for a classic semifreddo. Eggs, sugar and cream. I added a layer of my favorite cocoa and Biscoff cookie crust and freshly chopped cherries. And….. I topped it all with my go-to cherry sauce. HEAVEN!

Black Forest Semifreddo

Prep Time: 30 minutes

Cook Time: 15 minutes

Total Time: 8 hours, 45 minutes

Yield: 8 to 10 servings


  1. Black Forest Semifreddo
  2. for the semifreddo:
  3. 4 Tbsp granulated sugar
  4. 2 large eggs, separated
  5. 1 c heavy cream
  6. pinch of salt
  7. 1/2 tsp vanilla extract
  8. for the cookie crust:
  9. 3 1/2 oz Biscoff cookies or graham crackers
  10. 1/2 tsp instant coffee granules
  11. 3 Tbsp butter, melted
  12. 2 Tbsp granulated sugar
  13. 2 Tbsp brown sugar
  14. 2 Tbsp cocoa powder
  15. for the cherry sauce:
  16. 6 oz. ( 1 c ) pitted cherries
  17. 1/4 c granulated sugar
  18. 1/2 c water
  19. about 10 chopped cherries ( 2 oz. )


    To make the cherry sauce:
  1. Place cherries, sugar and water in a medium saucepan.
  2. Cook until cherries burst and the sauce thickens. Cool completely.
  3. to make the cookie layer:
  4. In a food processor, crush cookies to crumbs. Add coffee granules, both sugars and cocoa powder.
  5. Pulse for 30 seconds. Add melted butter. Pulse for about a minute.
  6. Transfer into a small bowl. Set aside.
  7. assembly:
  8. Line a loaf pan with a plastic wrap, making sure you have a nice overlap that will make pulling our the ready semifreddo out easy.
  9. Spray with cooking spray. Set aside.
  10. Prepare 3 bowls.
  11. In one bowl, beat egg yolks with sugar and vanilla until pale.
  12. In a second bowl, beat cream until soft peaks form.
  13. In a third bowl, beat egg whites with salt until stiff peaks form.
  14. Add cream mixture to egg yolk mixture and gently fold in just a couple of times.
  15. Now, add the egg whites mixture and fold in until everything is uniform.
  16. Do not overmix, or you will beat the whole air out.
  17. Pour half of the semifreddo mixture into your lined pan.
  18. Sprinkle half of the cookie crumbs mixture over it. Top with chopped cherries.
  19. Pour the rest of your semifreddo mixture over the cherries layer. Smooth it out.
  20. Sprinkle the rest of your cookie crust over the top. Press gently.
  21. Cover with a plastic wrap and place in the fridge for at least 8 hours or overnight.
  22. Slice and serve with cherry sauce.

    I have never made semifreddo either. I read up on it, and it says anything that is semi frozen, but still soft enough to cut through.

  6. Darn! I think I missed the boat on this one…. I would have joined otherwise. Everyone’s semifreddo looks fabulous!! I have never heard of a semifreddo before anyway… does my graham cracker cherry cheesecake pie work?
