  • 2 lbs sweet potatoes
  • 3 tablespoons unsalted butter
  • ¼ cup packed brown sugar
  • ½ teaspoon cinnamon
  • teaspoon ground cloves
  • 1 orange zested and juiced

  • Peel the potatoes. Cut them into large chunks and place in a large pot.
  • Add enough water to cover the potatoes.
  • Cook over medium heat until soft, about 15 minutes.
  • Drain the water by pouring potatoes into a colander set over a sink. Let as much water drip off to prevent watery potatoes.
  • Place potatoes back in the same pot, add butter, sugar, orange zest, juice, and spices.
  • Whip with an electric mixer or use a potato masher.
  • Serve warm.

  • Any leftovers should be stored in a container with a lid, in the fridge, for up to 5 days.
  • Reheat them in a microwave or in a pot on the stove. Add more butter or even half and half if needed.
