Roasted Cabbage

This simple Roasted Cabbage is a great way to bring out the flavor in this vegetable. Caramelized on the edges and soft in the center, this side dish is a tasty way to enjoy cabbage!

  • ½ cabbage head small
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • ¼ teaspoon paprika optional


  1. Preheat oven to 400 degrees F.
  2. Line a large baking sheet with parchment paper.
  3. Remove the outer layer of leaves from your cabbage.
  4. Slice cabbage into 1/4″ thick slices. Arrange on a baking sheet.
  5. Drizzle with olive oil and season with salt and pepper (sprinkle any other seasoning you are using).
  6. Roast in a preheated oven for 20 to 25 minutes.

Recipe Notes

  • I do not flip my cabbage slices. You can if you like.
  • I suggest counting one slice of cabbage per person, for serving quantity purposes.
