for the swirl:

  • 3 Tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon

for the bread:

  • 2 cups old-fashioned oats
  • 1/2 cup creamy peanut butter
  • 2 medium bananas (the more ripe the sweeter the muffins)
  • 2 large egg
  • 1/2 cup Greek yogurt OR sour cream
  • 6 Tablespoons packed brown sugar
  • 1 teaspoon pure vanilla extract
  • 1.25 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt


  • Spray a 9” x 5” loaf pan with non-stick cooking spray. Set aside.
  • Preheat oven to 350 degrees F.
  • In a small bowl, mix brown sugar with cinnamon. Set aside.
  • Place all ingredients in a blender. Blend for 20 seconds, until the ingredients start to come together.
  • Scrape sides of blender jar.
  • Blend 20 to 25 seconds more until the batter is smooth. It will look a little grainy from the oats.
  • Pour half of the batter into prepared pan. Sprinkle with cinnamon sugar. Top with remaining batter.
  • Bake bread for 40 to 43 minutes OR until the top is dry and golden brown.
  • Cool in pan for 10 to 15 minutes. Transfer onto a cooling rack or wooden cutting board and cool completely.
