Ingredients
for the swirl:

medium bananas (the more ripe
the sweeter the muffins)

Greek yogurt OR sour cream

Instructions
Spray a 9” x 5” loaf pan with non-stick cooking spray. Set aside.
Preheat oven to 350 degrees F.
In a small bowl, mix brown sugar with cinnamon. Set aside.
Place all ingredients in a blender. Blend for 20 seconds, until the ingredients start to come together.
Scrape sides of blender jar.
Blend 20 to 25 seconds more until the batter is smooth. It will look a little grainy from the oats.
Pour half of the batter into prepared pan. Sprinkle with cinnamon sugar. Top with remaining batter.
Bake bread for 40 to 43 minutes OR until the top is dry and golden brown.
Cool in pan for 10 to 15 minutes. Transfer onto a cooling rack or wooden cutting board and cool completely.
