Ingredients

  • 2 English cucumbers
  • 1/2 cup sliced red onion
  • 2 tablespoons chopped green onion
  • 1/4 cup rice vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • toasted sesame seeds optional garnish

Instructions

  1. Slice the cucumber thinly.
  2. Slice red onion and chop green onion.
  3. Combine veggies in a bowl.
  4. Mix dressing ingredients in a small jar and shake well.
  5. Pour over veggies and toss gently.
  6. Garnish with toasted sesame seeds and chopped peanuts.
  7. Serve right away.
