  • 1 cup yellow cornmeal I used Hodgson Mill Yellow Cornmeal
  • 1 cup all-purpose flour
  • 2 tps baking powder
  • 1/4 tsp baking soda
  • 1 Tbsp granulated sugar
  • 1 tsp salt
  • 1 cup buttermilk or sour milk
  • 1 large egg
  • 1/4 cup vegetable or canola oil
  • 1 medium zucchini

  1. Peel the zucchini.
  2. Set a colander over a bowl and grate the zucchini into the colander.
  3. Sprinkle 1 teaspoon of salt over the zucchini. Set aside. (this will release the water from the veggie).
  4. Spray your muffin pan with cooking spray or grease with butter. Set aside.
  5. Preheat oven to 400 degrees F.
  6. In a large mixing bowl, whisk together the dry ingredients (flour, cornmeal, baking powder, baking soda, sugar and salt).
  7. In another mixing bowl, whisk together the wet ingredients (buttermilk, oil and egg).
  8. With a back of a spoon, squeeze as much water out of the zucchini as possible.
  9. Add the wet ingredients to the dry ingredients. Add the grated zucchini.
  10. Stir the ingredients with a wooden spoon. Do not overmix! The batter should be lumpy.
  11. Scoop the batter with an ice cream scoop into your prepared muffin pan.
  12. Bake for 20 to 22 minutes, until the tops are golden and the toothpick inserted in each muffin comes out clean.
  13. Cool to room temperature.
