  • 14 Oreos regular
  • 2 Tablespoons unsalted butter melted
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 4 Tablespoons sour cream
  • 4 Tablespoons all-purpose flour
  • 1/2 teaspoon pure vanilla extract
  • 3/4 teaspoon peppermint extract
  • 2 large eggs
  • green food coloring optional

  • Preheat oven to 350 degrees F.
  • Line an 8" square baking pan (greased) with parchment paper. Set aside.
  • To make the crust:
  • Place Oreos in food processor (a small one works just fine) and blend until fine. Add melted butter and blend until it comes together.
  • Press the Oreo crust mixture into the bottom of the pan.
  • Bake crust for 10 minutes.
  • In a large mixing bowl, beat cream cheese with an electric mixer for 30 seconds, until creamy.
  • Add sugar and mix in well.
  • Add sour cream, flour and both extracts. Mix in well.
  • Add eggs and mix in well.
  • Add food coloring if desired and mix in.
  • Pour filling over crust. Tap the pan against the counter to release any air bubbles.
  • Bake cheesecake bars for 33 to 35 minutes.
  • Remove from the oven and cool in pan completely.
  • Remove from pan and chill in fridge for at least 2 hours, preferably overnight.
  • Slice and serve.
