Make Air Fryer Chicken and Vegetables for lunch or dinner when you need something quick! This dish is packed with healthy veggies and juicy chicken that make it a tasty low-carb option.
Slice the chicken breast into ½" thick strips, then each strip into 3 bite-size pieces. Place chicken in a bowl.
1 ½ lbs chicken breast
In a small bowl, mix together the seasoning: salt, pepper, paprika, onion and garlic powders, Italian seasoning.

Pour 1 tablespoon of oil over chicken and sprinkle half of the seasoning mix. Stir with a spoon until each piece is seasoned.

Chop vegetables and place in a bowl. Toss with remaining oil and seasoning.

Combine chicken and vegetables.
Preheat air fryer to 400° for 3 minutes.
Arrange chicken and veggies in the air fryer basket.
Cook for 5 minutes, shake the basket and cook for 4 to 5 minutes more.
Serve garnished with crushed red pepper flakes and parsley.

Notes
There are so many air fryers on the market, some with dual heating elements. Those won’t require shaking the basket halfway through the cooking cycle. Also, as with traditional ovens, each air fryer is different. Check on the dish a few minutes before the set timer.
You can add mushrooms, yellow squash, cauliflower, sugar snap peas, cabbage, cherry tomatoes, celery, etc. If you want to add root vegetables, like potatoes or carrots, keep in mind that they will need more cooking time.
All leftovers should be stored in a container with a lid, for up to 3 days. Reheat this dish easily in the air fryer, stove top, or microwave.
