Caramel Apple Crumb Bars

Ingredients

!for the sauce:

  • 2 Tbsp unsalted butter
  • 1/4 cup packed light brown sugar
  • 1 to 2 Tbsp milk
  • 1/2 cup powdered sugar

!for the crust:

  • 1/2 cup unsalted butter melted, cooled
  • 1/2 cup packed light brown sugar
  • 1.5 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

!for the filling:

  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 3 Tbsp all-purpose flour
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 c apple butter or applesauce
  • 1/2 medium Granny Smith apple shredded

Instructions

to make the glaze:

  1. In a medium saucepan, melt butter over medium low heat.
  2. Add sugar and bring to a boil. Turn the heat down to low and simmer the mixture for about 2 minutes, stirring constantly.
  3. Stir in 1 tablespoon of milk.
  4. Heat to boil.
  5. Take of the heat, cool for 5 minutes. Transfer into a medium mixing bowl.
  6. Cool to lukewarm, about 30 minutes.
  7. If the sauce hardens, microwave for 5 to 10 seconds.
  8. Add powdered sugar and whisk. If the mixture is crumbly, add another tablespoon of warm milk.
  9. Whisk until drizzling consistency.

to make the crust:

  1. Grease an 8" square pan. Line with parchment paper and grease the sides and the bottom. Set aside.
  2. Preheat the oven to 375 degrees F.
  3. In a medium mixing bowl, whisk melted butter with sugar. Add remaining ingredients and stir everything until a thick dough forms. Reserve 3/4 of a cup for the crumb topping.
  4. Press the remaining dough onto the bottom of prepared pan.

to make the filling:

  1. In a medium mixing bowl, whisk all ingredients until smooth.
  2. Pour over the crust.
  3. Top with little bits of the reserved dough to make the crumb topping.
  4. Bake the bars for 25 to 28 minutes.
  5. Cool completely in the pan.
  6. Drizzle with caramel sauce or glaze
