  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  1. Trim excess fat off chicken thighs.
  2. In a medium bowl, mix oil, lemon juice, and seasoning. Add chicken to bowl and toss to coat. Cover the bowl with saran wrap.
  3. Let the chicken sit in the marinade for 20 minutes (or 30 minutes, if you just pulled it out of the fridge).
  4. Meanwhile, preheat the grill until hot.
  5. Using kitchen tongs, place chicken thighs on the grill. Cook for 5 to 6 minutes, per side. Check the chicken with a meat thermometer. The internal temperature should be at least 165° Fahrenheit.

  6. Remove from grill and let stand for a few minutes before serving, so the juices can redistribute in the meat. If you cut it right away, they will escape.
