Classic Snowball Cookies

These Classic Snowball Cookies are buttery, sweet and just melt in your mouth! A perfect easy treat to make for the holidays.

Ingredients

  • 1 cup unsalted butter softened
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • ¾ cup chopped nuts see note
  • 1 cup powdered sugar for rolling cookies

Instructions

  1. In a large mixing bowl, cream butter with a hand mixer for 30 seconds.
  2. Add granulated sugar and cream for 3 minutes until light and fluffy.
  3. Add vanilla extract and mix in.
  4. Add chopped nuts and flour. Mix in. The dough will be thick. You can use a wooden spoon to mix in the dry ingredients.
  5. Cover the bowl and chill the dough for 30 minutes, to make it easier to roll.
  6. Preheat oven to 325° F. Line two large baking sheets with parchment paper or silicone baking mat.

  7. Scoop 1 tablespoon of dough and roll it into balls. Place on a baking sheet, spacing them about 2" apart.
  8. Bake cookies for 16 to 18 minutes.
  9. Cool cookies completely.
  10. Place powdered sugar in a shallow bowl. Roll cookies in sugar, repeat twice if needed for a thicker layer.
