Ingredients

  • 4 medium beets
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups mixed greens
  • 1 cup feta cheese
  • ½ cup chopped pecans
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 400° F.
  • Wash, trim and chop beets. Place on a baking sheet and roast for 30 to 35 minutes.
  • Remove from the oven and let cool.
  • Arrange greens in a bowl or plate.
  • Top with roasted beets, feta and pecans.
  • Mix oil, lemon juice, salt and pepper. Drizzle over salad.
  • Serve immediately.
