Ingredients

  • 4 medium beets
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 400° F. Line a large baking sheet with parchment paper or silicone baking mat.

  2. Trim greens off the beets. Wash. Peel skin, if desired.
  3. Cut into ½" cubes.

  4. Toss chopped beets with olive oil and seasoning.
  5. Arrange on the baking sheet in a single layer.
  6. Roast for 35 to 40 minutes, or until soft.
  7. Remove from oven and cool for 10 minutes before serving.
  8. Enjoy!
