This Easy Crumb Cake with the best crumb topping is easy to make, even if you are a beginner baker. No mixer or special flour needed. The perfect dessert to serve with coffee or tea!
Preheat the oven to 375° F. Line 8 or 9" square or round baking pan with parchment paper or grease and flour. Set aside.
In a large mixing bowl, whisk dry ingredients.
1 ½ cup all-purpose flour, ½ cup granulated sugar, ¼ teaspoon salt, 2 teaspoon baking powder, ¼ teaspoon baking soda, 1 ½ teaspoon ground cinnamon
Whisk wet ingredients in a large measuring cup or a medium bowl.
2 large eggs, ¾ cup buttermilk, ½ cup vegetable oil, 1 ½ teaspoon pure vanilla extract
Combine all and stir until combined. Do not overmix.
Pour into prepared pan.
Melt butter in a heat-proof bowl, in the microwave. Start with 20-second increments.

Cool it completely on the counter. It should be cool to the touch. Don't rush it and chill in the fridge or it will solidify.
Mix dry ingredients in a bowl and add melted butter.
1 ½ cup all-purpose flour, ⅓ cup packed light brown sugar, ⅓ cup granulated sugar, 1 teaspoon ground cinnamon, ½ teaspoon salt
Stir the mixture with a fork until it resembles coarse crumbs.
Sprinkle over the cake layer.
Bake the cake in a preheated oven for 32 to 35 minutes OR until a toothpick inserted in a few places comes out clean.
Cool cake completely before slicing.
